Instructions
1. Prep the Dish & Chiles

Preheat oven to 350°F (175°C).

Spray a 9×9-inch baking dish with non-stick spray.

Slice chiles wide open, rinse out seeds, and drain.
2. Layer the Ingredients

Arrange half of the chiles in the bottom of the dish.

Sprinkle with half of the grated jack and cheddar cheeses.

Layer the remaining chiles on top, followed by the rest of the cheeses.
3. Make the Egg Mixture

In a small bowl, whisk together eggs, flour, milk, salt, and black pepper until smooth.

Pour evenly over the layered chiles and cheese.
4. Bake

Bake uncovered for 30–35 minutes, until the top is golden brown.
5. Cool & Serve

Let casserole cool for a few minutes on a wire rack to firm up.

Slice into 6 equal pieces with a sharp knife or spatula. Serve and enjoy!
