1. Preheat Your Oven
Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish. You can also use a round cake pan or a loaf pan if preferred.
2. Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. This ensures that the cake will rise nicely and have that warm spiced flavor.
3. Mix the Wet Ingredients
In another bowl, whisk the eggs, sugar, oil, and vanilla extract until well combined.
4. Combine Everything
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Then, fold in the grated carrots and chopped walnuts. If you’re using raisins or coconut, fold them in as well.
5. Bake the Cake
Pour the batter into the greased baking dish and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
6. Cool the Cake
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before frosting.
