Instructions:
Step 1: Prepare the Cabbage Base
- Preheat your oven to 375°F (190°C).
- Take your medium head of cabbage and slice it into thick rounds, as shown in the image. These slices will serve as the base of your casserole.
- Arrange the cabbage rounds in a greased baking dish (9×13 inches). Set aside.
Step 2: Cook the Sausage
- In a large skillet, heat olive oil or butter over medium heat.
- Add chopped onion and garlic to the skillet, and sauté until soft and fragrant, about 3-4 minutes.
- Add your sausage to the skillet. If you’re using ground sausage, break it up with a spatula as it cooks. For sliced sausage, cook until browned.
- Season with salt, pepper, smoked paprika, and red pepper flakes (if using). Cook until the sausage is fully browned, about 8-10 minutes. Remove from heat and set aside.
Step 3: Layering the Casserole
- In a bowl, whisk together the eggs. Season with a pinch of salt and pepper.
- Pour the whisked eggs evenly over the cabbage slices in the baking dish.
- Add the cooked sausage mixture on top of the cabbage and eggs, distributing it evenly.
- Sprinkle the drained diced tomatoes over the sausage layer, spreading them across the top.
- Finally, top everything with shredded cheese.
Step 4: Bake the Casserole
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Check the cabbage by inserting a fork into the center; it should be tender but not mushy.
Step 5: Serve and Enjoy
- Once baked, allow the casserole to cool for a few minutes before serving. The layers will settle, making it easier to slice and serve.
- Serve warm as a hearty main dish, or pair with a side of fresh salad or crusty bread for a complete meal.
