If you love classic stuffed peppers but don’t have the time (or patience) to carefully hollow, fill, and bake them, Quick & Easy Stuffed Pepper Soup is your perfect solution. It delivers all the comforting flavors of traditional stuffed peppers—savory ground beef, sweet bell peppers, tender rice, and rich tomato broth—in one hearty, fuss-free pot.

This soup is warm, satisfying, and ideal for busy weeknights. Even better, it uses simple pantry staples and comes together in under an hour.

Why You’ll Love This Soup

  • ✔ One-pot meal
  • ✔ Family-friendly and budget-friendly
  • ✔ Customizable (beef, turkey, vegetarian options)
  • ✔ Great for leftovers and meal prep

Ingredients You’ll Need

  • 1 lb ground beef (or ground turkey)
  • 1 tablespoon olive oil (if needed)
  • 1 small onion, diced
  • 2–3 bell peppers (red, green, yellow, or mixed), chopped
  • 3 cloves garlic, minced
  • 1 (14–15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • ¾–1 cup uncooked white rice
  • Optional: fresh parsley or shredded cheese for garnish

Step-by-Step Method

Step 1: Brown the Meat

Place a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. This should take about 5–7 minutes.

If there’s excess grease, carefully drain it off. If using lean turkey, you may need to add a tablespoon of olive oil before browning.

Step 2: Sauté the Vegetables

Add the diced onion and chopped bell peppers directly into the pot with the cooked meat. Stir and cook for about 4–5 minutes until the vegetables begin to soften.

Add the minced garlic and cook for another 30 seconds until fragrant. Be careful not to burn the garlic.

Step 3: Build the Flavor Base

Pour in the diced tomatoes (with their juices), tomato sauce, and beef broth. Stir everything together thoroughly.

Add Italian seasoning, paprika, salt, and black pepper. Stir again to evenly distribute the spices.

At this stage, your soup should look rich and vibrant with chunks of peppers and beef floating in a tomato-red broth.
