Below is a complete step-by-step guide to help you make these delicious cheesy sausage puff pastry rolls from scratch.

Ingredients

To make about 12 rolls, you will need:

  • 1 sheet puff pastry (thawed if frozen)
  • 300 g ground sausage or sausage meat
  • 1 cup shredded cheese (cheddar or mozzarella works best)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust depending on sausage saltiness)
  • 1 teaspoon dried parsley
  • 1 egg (for egg wash)
  • 1 tablespoon milk
  • 1 tablespoon olive oil

Optional additions:

  • Chili flakes for a spicy kick
  • Mustard or ketchup for serving

Step 1: Prepare the Filling

Start by heating a small pan over medium heat and adding the olive oil. Add the finely chopped onion and cook for about 2–3 minutes until it becomes soft and slightly translucent.

Next, add the minced garlic and cook for another 30 seconds until fragrant.

Add the sausage meat to the pan and cook it while breaking it apart with a spoon. Continue cooking for about 5 minutes until the meat is browned and fully cooked.

Season the mixture with paprika, black pepper, salt, and dried parsley. Stir everything well so the flavors combine evenly.

Remove the pan from the heat and allow the mixture to cool for about 5 minutes. Once slightly cooled, mix in the shredded cheese. The warmth of the sausage will slightly melt the cheese, creating a creamy filling.
