This Slow Cooker Potato and Onion Bake is perfect for busy days, cozy evenings, or as a hearty side for family meals. The slow cooking process allows the flavors to meld beautifully, resulting in tender potatoes, caramelized onions, and a creamy, savory finish.


Ingredients

  • 6–7 medium potatoes (Yukon Gold or Russet work best)
  • 2 large onions
  • 2 cups heavy cream (or half-and-half for a lighter version)
  • 2 cloves garlic, minced
  • 1 ½ cups shredded cheese (cheddar or a mix of your choice)
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • ½ teaspoon paprika (optional, for extra warmth)

Preparation Steps

1. Prepare the Vegetables

Start by peeling the potatoes and slicing them into thin, even rounds—about 3–4 mm thick. Thin slices ensure they cook evenly and absorb all the flavors.

Next, peel the onions and slice them into thin rings or half-moons. The thinner the slices, the better they will soften and caramelize during cooking.


2. Layer the Ingredients

Lightly grease the inside of your slow cooker with butter or cooking spray.

Begin layering:

  • Add a layer of potato slices at the bottom
  • Follow with a layer of onions
  • Sprinkle a little garlic, salt, pepper, and herbs

Repeat the layering process until all ingredients are used, finishing with a layer of potatoes on top.
