Amish Porcupine Meatballs: A Hearty, Old-Fashioned Comfort Dish
Amish Porcupine Meatballs are a simple, satisfying meal rooted in traditional home cooking. Despite the unusual name, there are no porcupines involved—these meatballs get their name from the way the rice inside them pokes out during cooking, resembling tiny quills. This dish is beloved for its affordability, ease of preparation, and rich, comforting flavor.
Perfect for a family dinner, this recipe combines ground meat, rice, and a savory tomato-based sauce into a one-pot meal that’s both filling and flavorful.
Ingredients
For the Meatballs:
- 500g (1 lb) ground beef
- 1/2 cup uncooked white rice
- 1 small onion, finely chopped
- 1 egg
- 2 tablespoons milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder (optional)
For the Sauce:
- 1 can (400g / 14 oz) crushed tomatoes
- 1 cup water or beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- Salt and pepper to taste
Step-by-Step Method
Step 1: Prepare the Meatball Mixture
In a large mixing bowl, combine the ground beef, uncooked rice, chopped onion, egg, milk, salt, pepper, and garlic powder. Mix everything together gently using your hands or a spoon.
Avoid overmixing, as this can make the meatballs tough. The mixture should be well combined but still light.
Step 2: Shape the Meatballs
Take small portions of the mixture and roll them into meatballs about the size of a golf ball. You should end up with around 12–16 meatballs depending on size.
Place them on a plate or tray as you finish shaping them.
Step 3: Prepare the Sauce
In a large skillet or deep pan, combine the crushed tomatoes, water (or beef broth), Worcestershire sauce, sugar, salt, and pepper. Stir well and bring the mixture to a gentle simmer over medium heat.
