There are certain dishes that quietly become legends—not because they’re fancy, but because they show up everywhere people gather. This one is exactly that kind of recipe. It’s the kind of dish that sat on church tables, family reunions, school potlucks, and neighborhood gatherings for decades without ever coming home with leftovers.
From 1975 to 2010, this was the dish my mother-in-law brought to every single potluck. People stopped asking what she was bringing—they just knew it would be there. Creamy, comforting, slightly crispy on top, and always gone within minutes.
Today, I’m breaking it down so you can recreate that same timeless potluck classic: a creamy hashbrown casserole (often called “funeral potatoes”).
My Mother-in-Law’s Legendary Potluck Hashbrown Casserole
Why this dish became a potluck staple
This recipe survived for decades because it checks every box:
- Cheap, simple ingredients
- Easy to scale for large groups
- Can be made ahead of time
- Crowd-pleasing flavor (even picky eaters love it)
- Stays warm and tastes even better after resting
It’s not gourmet—it’s comfort food designed for sharing.
Ingredients (classic 1970s–2000s version)
- 1 large bag (about 30–32 oz) frozen hashbrowns, thawed
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup melted butter
- 2 cups shredded cheddar cheese
- 1 small onion, finely chopped (optional but traditional)
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Topping: 1–2 cups crushed cornflakes or breadcrumbs + 2 tbsp melted butter
Step-by-Step Method
Step 1: Prepare the base
Start by preheating your oven to 350°F (175°C). Lightly grease a large baking dish (usually 9×13 inches).
If your hashbrowns are frozen, let them thaw completely. This prevents extra water from ruining the creamy texture.
Step 2: Mix the creamy filling
In a large mixing bowl, combine:
- sour cream
- cream of chicken soup
- melted butter
- garlic powder
- salt and pepper
Stir until smooth and fully blended.
This mixture is what gives the casserole its signature creamy, slightly tangy flavor that holds everything together.
Step 3: Add the main ingredients
Fold in:
- thawed hashbrowns
- shredded cheddar cheese
- chopped onion (if using)
Mix gently but thoroughly so every potato shred is coated.
At this point, it already smells like a classic potluck dish from another era.
