Ingredients

For the crust:

  • 200g (about 2 cups) crushed digestive biscuits or graham crackers
  • 100g (7 tablespoons) melted butter

For the filling:

  • 400g (14 oz) cream cheese, softened
  • 200ml (¾ cup + 1 tablespoon) heavy whipping cream
  • 100g (½ cup) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional, for freshness)

Optional toppings:

  • Fresh fruits (strawberries, blueberries, etc.)
  • Fruit compote or jam
  • Chocolate sauce or caramel drizzle

Step 1: Prepare the Crust

Start by crushing your biscuits into fine crumbs. You can do this using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin.

Transfer the crumbs into a bowl and pour in the melted butter. Mix thoroughly until all the crumbs are evenly coated and resemble wet sand.

Press this mixture firmly into the bottom of a springform pan (around 8 inches in diameter). Use the back of a spoon or a flat-bottomed glass to compact it tightly and evenly.

Place the crust in the refrigerator for at least 20–30 minutes to set while you prepare the filling.
