No-Bake Cheesecake: A Creamy Dessert Without the Oven
Few desserts strike the perfect balance between elegance and simplicity quite like a no-bake cheesecake. With its velvety texture, rich flavor, and effortless preparation, this dessert is ideal for beginners and experienced home cooks alike. Best of all, you don’t need an oven—just a bit of patience while it chills.
Below is a detailed, step-by-step guide to creating a smooth, perfectly set no-bake cheesecake from scratch.
Ingredients
For the crust:
- 200g (about 2 cups) crushed digestive biscuits or graham crackers
- 100g (7 tablespoons) melted butter
For the filling:
- 400g (14 oz) cream cheese, softened
- 200ml (¾ cup + 1 tablespoon) heavy whipping cream
- 100g (½ cup) granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional, for freshness)
Optional toppings:
- Fresh fruits (strawberries, blueberries, etc.)
- Fruit compote or jam
- Chocolate sauce or caramel drizzle
Step 1: Prepare the Crust
Start by crushing your biscuits into fine crumbs. You can do this using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin.
Transfer the crumbs into a bowl and pour in the melted butter. Mix thoroughly until all the crumbs are evenly coated and resemble wet sand.
Press this mixture firmly into the bottom of a springform pan (around 8 inches in diameter). Use the back of a spoon or a flat-bottomed glass to compact it tightly and evenly.
Place the crust in the refrigerator for at least 20–30 minutes to set while you prepare the filling.
