Creamy Slow Cooker Beef & Mushroom Noodles
When you need a comforting dinner that feels rich, hearty, and homemade without spending hours standing over the stove, Creamy Slow Cooker Beef & Mushroom Noodles is the perfect choice. Tender beef slowly cooks in a flavorful mushroom sauce until it becomes melt-in-your-mouth soft, while wide egg noodles soak up every creamy bite. This meal is ideal for busy weekdays, cozy weekends, or family gatherings because the slow cooker does most of the work for you.
The combination of savory beef, earthy mushrooms, garlic, onions, and creamy sauce creates a warm and satisfying dish that tastes like classic comfort food. The best part is that the ingredients are simple and easy to find, yet the final result tastes restaurant-worthy.
Why This Recipe Works
Slow cooking allows the beef to become incredibly tender while building deep flavor throughout the sauce. Mushrooms release their natural richness as they cook, blending beautifully with the cream and broth. The noodles finish the dish by adding a soft, comforting texture that makes every bite filling and satisfying.
This recipe is also flexible. You can use different mushrooms, switch the noodles, or add vegetables depending on your preferences.
Ingredients
For the Beef and Sauce
- 2 pounds beef stew meat or chuck roast, cut into chunks
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 16 ounces mushrooms, sliced
- 3 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 can cream of mushroom soup
- 1 cup sour cream
- 1 tablespoon cornstarch
- 2 tablespoons water
For the Noodles
- 12 ounces egg noodles
- Fresh parsley for garnish
Step 1: Prepare the Beef
Start by trimming any large pieces of fat from the beef. Cut the meat into medium-sized chunks if needed. Pat the beef dry with paper towels to help it brown properly.
Heat olive oil in a large skillet over medium-high heat. Add the beef in batches, making sure not to overcrowd the pan. Sear each side for about 2 to 3 minutes until browned.
This step adds extra flavor to the dish by creating a rich caramelized surface on the meat. Although you can skip browning if you are short on time, it greatly improves the final taste.
Transfer the browned beef into the slow cooker.
Step 2: Cook the Vegetables
Using the same skillet, add the diced onions and sliced mushrooms. Cook for about 5 minutes until the onions soften and the mushrooms begin releasing their moisture.
Stir in the garlic and cook for another minute until fragrant.
Pour the vegetable mixture into the slow cooker over the beef.
