For the Chicken

  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

For the Pasta

  • 300–350 g pasta, such as fettuccine, penne, rotini, or egg noodles
  • Water for boiling
  • 1 tablespoon salt for pasta water

For the Creamy Garlic Parmesan Sauce

  • 2 tablespoons butter
  • 4 cloves garlic, finely minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup grated parmesan cheese
  • ½ cup shredded mozzarella cheese, optional for extra creaminess
  • ½ teaspoon Italian seasoning
  • ½ teaspoon red chili flakes, optional
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Step 1: Prepare the Chicken

Start by cutting the chicken breasts into medium bite-size pieces. Try to keep the pieces similar in size so they cook evenly.

Place the chicken in a bowl and season it with salt, black pepper, garlic powder, onion powder, paprika, and Italian seasoning. Mix well until every piece of chicken is coated with the spices.

Let the chicken rest for 10 minutes. This short resting time helps the seasoning absorb into the meat and gives the chicken better flavor.

Step 2: Cook the Pasta

Bring a large pot of water to a boil. Add one tablespoon of salt to the boiling water, then add the pasta.

Cook the pasta according to the package instructions until it is al dente. This means the pasta should be cooked but still slightly firm when bitten.

Before draining the pasta, save about ½ cup of pasta water. This starchy water can help loosen the sauce later if it becomes too thick.

Drain the pasta and set it aside.

Step 3: Sear the Chicken

Heat olive oil and one tablespoon of butter in a large skillet over medium-high heat.

Once the butter melts and the pan is hot, add the seasoned chicken pieces. Spread them out in a single layer. Do not overcrowd the pan, because overcrowding makes the chicken steam instead of brown.

Cook the chicken for about 4–5 minutes on one side, then turn the pieces and cook for another 4–5 minutes until golden brown and fully cooked.

The chicken should have a light golden crust on the outside and remain juicy inside. Remove the chicken from the skillet and place it on a plate.
