  • 16 oz cream cheese, softened
  • 1 cup dried beef, finely chopped

  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 tablespoon sour cream or mayonnaise, optional for extra creaminess

  • ½ cup dried beef, finely chopped
  • ¼ cup chopped pecans or walnuts, optional
  • 1 tablespoon chopped parsley, optional
  • Extra green onions, optional

  • Butter crackers
  • Pretzels

  • Celery sticks
  • Carrot sticks
  • Cucumber slices

Step 1: Prepare the Dried Beef

Start by removing the dried beef from the package. Pat it lightly with a paper towel if it feels too moist.

Chop the dried beef into very small pieces. Smaller pieces mix better into the cream cheese and make the cheese ball easier to spread.

If your dried beef tastes very salty, you can rinse it quickly under cold water, then dry it well before chopping. This is optional, but it helps control the saltiness.

Set aside some chopped dried beef for the outside coating.

Step 2: Soften the Cream Cheese

Place the cream cheese in a large mixing bowl and let it sit at room temperature for about 30 minutes.

Softened cream cheese is much easier to mix and gives the cheese ball a smooth texture. If the cream cheese is too cold, the mixture may become lumpy.

Do not melt the cream cheese. It should be soft, not liquid.

Step 3: Mix the Cream Cheese Base

Add Worcestershire sauce, garlic powder, onion powder, black pepper, and sour cream or mayonnaise if using.

Mix until everything is fully combined.

The Worcestershire sauce gives the cheese ball a deeper savory flavor, while the garlic and onion powder add warmth without overpowering the dried beef.

Step 4: Add the Cheese and Green Onions

Add the shredded cheddar cheese and sliced green onions to the cream cheese mixture.

Stir gently until evenly mixed.

Cheddar adds sharpness and richness, while green onions add freshness. The combination keeps the cheese ball from tasting too heavy.

For best results, use freshly shredded cheddar cheese because it blends more smoothly into the mixture.

Step 5: Add the Dried Beef

Add the chopped dried beef to the bowl.

Mix until the beef is evenly spread throughout the cheese mixture. Make sure every spoonful has a little bit of beef, cheese, and green onion.

Taste the mixture before adding any salt. Usually, you do not need extra salt because dried beef is already salty.

Step 6: Shape the Cheese Ball

Place a large piece of plastic wrap on your counter.

Spoon the cheese mixture into the center of the plastic wrap. Gather the edges of the wrap around the mixture and gently shape it into a ball.

Use your hands to round it out while keeping the plastic wrap between your hands and the cheese mixture. This keeps things clean and makes shaping easier.

If you prefer, you can shape it into a log instead of a ball. A cheese log is easier to slice and also looks nice on a serving board.
