Crockpot Green Beans, Potatoes, and Ham: A Comforting One-Pot Southern-Style Meal

Crockpot Green Beans, Potatoes, and Ham is a simple, hearty, and comforting dish made with tender green beans, soft potatoes, smoky ham, onions, garlic, and savory broth. It is the kind of recipe that tastes like home-cooked comfort food without requiring much effort. Everything goes into the slow cooker, cooks low and slow, and turns into a flavorful meal with rich, country-style taste.

This dish is perfect for busy weekdays, family dinners, Sunday meals, potlucks, or when you want a warm meal that feels satisfying but simple. The slow cooker allows the ham to season the vegetables naturally, while the potatoes absorb the broth and become soft and flavorful.

Why This Recipe Works

The secret to this dish is slow cooking. Green beans become tender, potatoes turn creamy, and ham releases a smoky, salty flavor into the broth. Instead of cooking each ingredient separately, the crockpot lets everything simmer together gently.

The result is a rustic, old-fashioned dish that can be served as a main meal or a side dish. It is filling enough on its own, especially when served with cornbread, biscuits, or rice.

Ingredients

Main Ingredients

  • 1 ½ pounds fresh green beans, trimmed and cut in half
  • 1 ½ pounds baby potatoes or Yukon gold potatoes, halved or quartered
  • 2 cups cooked ham, diced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 2 tablespoons butter
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes, optional
  • 1 teaspoon dried parsley or thyme, optional

Optional Add-Ins

  • 1 ham hock for deeper smoky flavor
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon Cajun seasoning
  • 1 cup sliced carrots
  • ½ cup chopped celery
  • A splash of apple cider vinegar before serving

Step 1: Prepare the Green Beans

Start by washing the green beans well under cold water. Trim off the ends, then cut the beans into halves or thirds.

Fresh green beans give the best texture, but frozen green beans can also be used. If using frozen green beans, add them directly to the crockpot without thawing.

Canned green beans can be used too, but they are already soft, so add them during the last hour of cooking instead of at the beginning.

Step 2: Prepare the Potatoes

Wash the potatoes thoroughly. If using baby potatoes, cut them in half. If using larger potatoes, cut them into medium chunks.

Try to keep the potato pieces similar in size so they cook evenly. Do not cut them too small because they may fall apart after several hours in the slow cooker.

Yukon gold potatoes work beautifully because they become creamy and buttery. Red potatoes also hold their shape well. Russet potatoes can be used, but they may break down more.
