  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • ¼ cup grated parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon red pepper flakes, optional

For the Crispy Topping

  • ¾ cup crushed crackers, panko breadcrumbs, or fried onions
  • 2 tablespoons melted butter
  • ¼ cup parmesan cheese
  • 1 tablespoon chopped parsley, optional

Step 1: Prepare the Asparagus

Start by washing the asparagus well under cold water. Pat it dry with a clean towel.

Trim off the tough woody ends. The easiest way is to bend one asparagus spear gently until it naturally snaps. Use that as a guide to cut the rest of the bunch.

Cut the asparagus into 2-inch pieces if you want the casserole easier to serve. You can also leave the spears whole for a more elegant presentation.

Step 2: Lightly Cook the Asparagus

Bring a pot of water to a boil and add a small pinch of salt.

Add the asparagus and cook for 2 to 3 minutes only. This step softens the asparagus slightly while keeping its color and texture.

Immediately drain the asparagus and rinse it under cold water, or place it in a bowl of ice water for a minute. This stops the cooking process and helps prevent the asparagus from becoming mushy in the oven.

Drain well and pat dry. Removing excess water is important because too much moisture can make the casserole watery.

Step 3: Make the Creamy Cheese Sauce

Place a skillet or saucepan over medium heat. Add the butter and let it melt.

Add the chopped onion if using, and cook for 2 to 3 minutes until soft. Then add the minced garlic and cook for about 30 seconds until fragrant.

Pour in the heavy cream and milk. Stir gently and let the mixture warm for 2 to 3 minutes. Do not boil it hard.

Add salt, black pepper, garlic powder, paprika, and red pepper flakes if you want a little heat.

Now reduce the heat to low and add the cheddar cheese, mozzarella cheese, and parmesan cheese. Stir slowly until the cheese melts into a smooth sauce.

The sauce should be creamy and slightly thick. If it becomes too thick, add a splash of milk. If it feels too thin, let it simmer gently for another minute.
