Spicy Mongolian Ground Beef Noodles: A Sweet, Savory, and Spicy Noodle Bowl

Spicy Mongolian Ground Beef Noodles are a fast, flavorful dinner made with tender noodles, seasoned ground beef, garlic, ginger, soy sauce, brown sugar, chili heat, and green onions. This dish has the bold flavor of Mongolian-style beef but uses ground beef to make it quicker, easier, and more affordable.

The sauce is the star of the recipe. It is sweet, salty, slightly sticky, and spicy, coating every strand of noodle with rich flavor. This meal is perfect for weeknight dinners because it comes together quickly and uses simple pantry ingredients.

Ingredients

For the Noodles

  • 12 ounces noodles, such as lo mein, spaghetti, ramen, or rice noodles
  • Water for boiling
  • 1 teaspoon salt

For the Ground Beef

  • 1 pound ground beef
  • 1 tablespoon vegetable oil, if needed
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 2 green onions, chopped

For the Mongolian Sauce

  • ½ cup low-sodium soy sauce
  • ⅓ cup brown sugar
  • ¼ cup water or beef broth
  • 1 tablespoon hoisin sauce, optional
  • 1 tablespoon oyster sauce, optional
  • 1 tablespoon chili garlic sauce or sriracha
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For Garnish

  • Sliced green onions
  • Sesame seeds
  • Extra chili flakes
  • Drizzle of chili oil, optional

Step 1: Cook the Noodles

Bring a large pot of salted water to a boil.

Add the noodles and cook according to the package directions until tender but not mushy.

Drain the noodles and set them aside. If they begin to stick together, toss them with a small splash of oil.

Do not overcook the noodles because they will cook a little more when mixed with the sauce.

Step 2: Make the Sauce

In a bowl, mix soy sauce, brown sugar, water or beef broth, hoisin sauce, oyster sauce, chili garlic sauce, and sesame oil.

Stir until the brown sugar dissolves.

In a separate small bowl, mix cornstarch with water to create a slurry. This will thicken the sauce later and help it cling to the noodles.

Step 3: Brown the Ground Beef

Heat a large skillet or wok over medium-high heat.

Add the ground beef and break it apart with a spoon. Cook until browned and no longer pink.

If the beef releases too much grease, drain the excess fat. Leave a small amount in the pan for flavor.
