Ground Beef Patty Melt: A Crispy, Cheesy Diner-Style Sandwich Recipe
A Ground Beef Patty Melt is the perfect combination of a juicy burger, grilled cheese sandwich, and caramelized onion toast. It is made with seasoned ground beef patties, melted cheese, buttery toasted bread, and sweet golden onions. Unlike a regular burger served on a bun, a patty melt is usually cooked on sliced bread, often rye, sourdough, or Texas toast, then grilled until the outside is crisp and the cheese is fully melted.
This recipe is rich, savory, and comforting. The beef gives it heartiness, the onions add sweetness, the cheese brings creaminess, and the toasted bread gives every bite a crispy buttery finish. It is a classic diner-style meal that can easily be made at home.
Ingredients
For the Beef Patties
- 1 pound ground beef
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Worcestershire sauce
- 1 tablespoon butter or oil for cooking
For the Caramelized Onions
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon oil
- ½ teaspoon salt
- ½ teaspoon sugar, optional
- 1 tablespoon water, if needed
For Assembling the Patty Melts
- 8 slices rye bread, sourdough, or thick white bread
- 4 tablespoons softened butter
- 8 slices Swiss cheese, cheddar cheese, or American cheese
- 2 tablespoons mayonnaise, optional
- 1 tablespoon mustard, optional
Step 1: Prepare the Onions
Start by slicing the onions thinly. The thinner the onions are, the faster they soften and caramelize.
Place a skillet over medium heat and add butter and oil. Once the butter melts, add the sliced onions and salt.
Cook the onions slowly, stirring often. At first, they will look firm and white, but after several minutes they will soften and release moisture.
Continue cooking for about 20 to 25 minutes, until the onions become golden brown and sweet. If they begin to stick to the pan, add a tablespoon of water and stir.
For a deeper caramel flavor, add a small pinch of sugar. This is optional, but it helps the onions brown beautifully.
When finished, remove the onions from the pan and set them aside.
Step 2: Season the Ground Beef
Place the ground beef in a bowl.
Add salt, black pepper, garlic powder, onion powder, and Worcestershire sauce.
Mix gently with your hands or a fork. Do not overmix the beef, because too much handling can make the patties dense and tough.
The seasoning should be simple. A patty melt is about balance: beef, cheese, onions, and toasted bread all working together.
Step 3: Shape the Patties
Divide the beef into 4 equal portions.
Shape each portion into a thin oval or rectangle, depending on the shape of your bread. The patty should be slightly larger than the bread because it will shrink while cooking.
Make the patties thinner than regular burger patties. A patty melt should be easy to bite through and should fit neatly inside the sandwich.
Press a small indentation in the center of each patty. This helps the meat cook evenly and prevents it from puffing up too much.
Step 4: Cook the Beef Patties
Heat a skillet or griddle over medium-high heat.
Add a little butter or oil. Once hot, place the patties in the pan.
Cook for about 3 to 4 minutes per side, depending on thickness. The outside should brown nicely, and the inside should be fully cooked.
For food safety, ground beef should reach an internal temperature of 160°F / 71°C.
Once cooked, remove the patties from the pan and set them aside.
