Patty Melt: A Classic Grilled Beef Sandwich with Caramelized Onions and Melted Cheese

A Patty Melt is one of the most satisfying comfort-food sandwiches you can make at home. It sits somewhere between a cheeseburger and a grilled cheese sandwich, combining a juicy beef patty, sweet caramelized onions, melted cheese, and buttery toasted bread. Unlike a regular burger, a patty melt is usually made with sliced bread instead of a bun, and it is cooked on a skillet until the outside becomes golden and crisp.

The beauty of a patty melt is its simplicity. You do not need fancy ingredients, but each step matters. The onions need to be cooked slowly until sweet, the beef patty should be thin and well-seasoned, the cheese should melt smoothly, and the bread should be toasted in butter until crisp. When done right, every bite is rich, savory, crispy, cheesy, and deeply comforting.

Ingredients

For the Beef Patties

  • 1 pound ground beef
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Worcestershire sauce, optional
  • 1 tablespoon butter or oil for cooking

For the Caramelized Onions

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon oil
  • ¼ teaspoon salt
  • ½ teaspoon sugar, optional
  • 1 tablespoon water, if needed

For the Sandwiches

  • 8 slices rye bread, sourdough, or white sandwich bread
  • 8 slices Swiss cheese, cheddar cheese, or American cheese
  • 3 tablespoons softened butter
  • Optional: mayonnaise, mustard, burger sauce, or Thousand Island dressing

Step 1: Prepare the Onions

Start by peeling and thinly slicing the onions. The thinner the slices, the faster and more evenly they will cook.

Place a skillet over medium-low heat. Add butter and oil. Once the butter melts, add the sliced onions and sprinkle them with a little salt.

Cook the onions slowly for about 20 to 30 minutes, stirring often. At first, the onions will soften and release moisture. After several minutes, they will begin turning golden brown.

If the onions start sticking to the pan, add a tablespoon of water and scrape the bottom gently. This helps lift the browned flavor from the pan and prevents burning.

For a slightly sweeter taste, add a small pinch of sugar. The onions are ready when they are soft, golden, and deeply flavorful.

Remove them from the skillet and set aside.

Step 2: Shape the Beef Patties

Place the ground beef in a bowl. Add salt, black pepper, garlic powder, onion powder, and Worcestershire sauce if using.

Mix gently with your hands. Do not overmix, because that can make the patties tough.

Divide the beef into 4 equal portions. Shape each portion into a thin patty slightly larger than the bread slices. The patties will shrink while cooking, so making them a little wider helps them fit the sandwich after cooking.

A patty melt works best with thin patties because they cook quickly and fit neatly between the bread.

Step 3: Cook the Patties

Heat a large skillet or griddle over medium-high heat.

Add a little butter or oil. Place the patties in the hot skillet and cook for about 3 to 4 minutes per side, or until browned and cooked through.

Press lightly only at the beginning if needed, but do not keep pressing while cooking. Pressing too much forces out the juices.

When the patties are done, remove them from the skillet and set them aside.

Step 4: Prepare the Bread

Choose sturdy bread that can hold the filling without becoming soggy. Rye bread is traditional, but sourdough, Texas toast, or regular sandwich bread also works well.

Spread softened butter on one side of each bread slice. The buttered sides will face outward when the sandwich is grilled.

If you want extra flavor, spread a thin layer of mustard, mayonnaise, burger sauce, or Thousand Island dressing on the inside of the bread.
