No-Peek Beef Tips / Creamy Mushroom Beef Bake: A Tender, Comforting Dinner Recipe
No-Peek Beef Tips, also known as Creamy Mushroom Beef Bake, is a rich, savory, oven-baked comfort dish made with tender beef pieces, creamy mushroom sauce, onion seasoning, and a thick gravy-style base. It is called “no-peek” because once everything is mixed and covered, the dish bakes slowly without opening the oven. This allows the beef to become soft, juicy, and full of flavor.
This recipe is perfect for busy days because the preparation is simple. You do not need to stand over the stove for a long time. Just mix, cover, bake, and let the oven do the work. The result is tender beef in a creamy mushroom gravy that tastes delicious over mashed potatoes, rice, noodles, or biscuits.
Ingredients
Main Ingredients
- 2 pounds beef stew meat or beef tips
- 1 can cream of mushroom soup
- 1 packet brown gravy mix
- 1 packet onion soup mix
- 1 cup beef broth
- ½ cup sour cream or heavy cream, optional for extra creaminess
- 1 cup sliced mushrooms, optional
- 1 small onion, sliced, optional
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 1 tablespoon butter or oil for greasing the dish
Optional Garnish
- Fresh parsley
- Cracked black pepper
- Extra sautéed mushrooms
Step 1: Choose the Right Beef
For this recipe, use beef stew meat, sirloin tips, chuck roast cut into cubes, or any beef suitable for slow cooking.
Chuck beef works especially well because it becomes tender as it bakes slowly. Leaner cuts can also be used, but they may not become as soft unless cooked carefully.
Cut the beef into medium bite-size pieces if it is not already cut. Try to keep the pieces similar in size so they cook evenly.
Step 2: Prepare the Baking Dish
Preheat your oven to 300°F / 150°C.
Grease a 9×13 inch baking dish or casserole dish with butter or oil. This helps prevent sticking and makes cleanup easier.
Use a dish that is deep enough to hold the beef and sauce without spilling.
Step 3: Add the Beef
Place the beef tips directly into the prepared baking dish.
Spread them out evenly so they are not piled too high in one area.
At this stage, you do not need to brown the beef first. The classic no-peek method keeps the recipe simple by letting the beef cook slowly in the sauce. However, if you want a deeper flavor, you can quickly sear the beef in a hot pan before adding it to the dish.
Step 4: Make the Creamy Mushroom Sauce
In a large bowl, add the cream of mushroom soup, brown gravy mix, onion soup mix, beef broth, garlic powder, black pepper, paprika, and Worcestershire sauce.
Whisk everything together until smooth.
The cream of mushroom soup creates the creamy base. The gravy mix thickens the sauce. The onion soup mix adds savory flavor. The beef broth keeps the dish moist while the beef slowly cooks.
If you want a richer sauce, add sour cream or heavy cream. This makes the gravy smoother and creamier.
