Step 1: Prepare the Crab Meat

Start by preparing the crab.

If using imitation crab, separate it into small pieces with your hands or chop it into bite-size chunks. Imitation crab has a soft texture and mild seafood flavor, so it works very well in cold salads.

If using canned crab, drain it very well. Press out extra liquid gently with a spoon or paper towel. Too much liquid can make the salad watery.

If using fresh cooked crab meat, check carefully for small pieces of shell before mixing.

Place the prepared crab meat in a large mixing bowl.

Step 2: Chop the Vegetables

Finely chop the celery and red onion. Slice the green onion thinly.
