Cheesy Sausage Breakfast Casserole: A Warm and Hearty Morning Bake

Cheesy Sausage Breakfast Casserole is a rich, comforting breakfast dish made with savory sausage, fluffy eggs, melted cheese, and tender bread or hash browns. It is the kind of recipe that feels homemade, filling, and perfect for feeding a family or a crowd.

This casserole is especially useful for busy mornings, weekend brunch, holidays, potlucks, or meal prep. You can prepare it the night before, place it in the refrigerator, and bake it the next morning. The result is a golden, cheesy breakfast bake with a soft center, crispy edges, and plenty of flavor in every bite.

Why This Breakfast Casserole Is Special

The best thing about this recipe is its balance of flavor and texture. The sausage adds a savory, slightly spicy taste. The eggs hold everything together and make the casserole soft and fluffy. The cheese melts through the layers, while the bread or potatoes give the dish body and make it more satisfying.

It is also very flexible. You can make it with pork sausage, turkey sausage, chicken sausage, or even plant-based sausage. You can add vegetables, different cheeses, or extra spices depending on your taste.

Ingredients

Main Ingredients

  • 1 pound breakfast sausage
  • 8 large eggs
  • 1 ½ cups milk
  • 1 cup heavy cream, or use extra milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 4 cups cubed bread, or 3 cups frozen hash browns
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried parsley or Italian seasoning
  • 1 tablespoon butter or oil for greasing the dish

Optional Add-Ins

  • Cooked bacon pieces
  • Mushrooms
  • Spinach
  • Green onions
  • Jalapeños
  • Diced tomatoes
  • Extra cheese for topping

Step 1: Prepare the Baking Dish

Start by preheating the oven to 350°F / 175°C.

Grease a 9×13 inch baking dish with butter or cooking spray. This prevents the casserole from sticking and helps the edges brown nicely.

If you are making the casserole ahead of time, prepare the dish the same way, but do not bake it until the next day.

Step 2: Cook the Sausage

Place a large skillet over medium heat. Add the breakfast sausage and break it apart with a wooden spoon.

Cook the sausage until it is browned and fully cooked. This usually takes about 7 to 10 minutes.

Once cooked, drain any excess grease from the pan. Too much grease can make the casserole heavy or oily.

Set the cooked sausage aside while you prepare the other ingredients.

Step 3: Cook the Vegetables

In the same skillet, add the chopped onion and bell pepper.

Cook for 3 to 4 minutes until they soften. Add the minced garlic and cook for another 30 seconds.

Cooking the vegetables before baking is important because it removes extra moisture and gives them a sweeter, deeper flavor.

If you add vegetables like mushrooms or spinach, cook them first as well. This keeps the casserole from becoming watery.

Step 4: Prepare the Bread or Hash Browns

You can make this casserole with bread cubes or hash browns.

For a bread version, use slightly dry bread. Day-old bread works best because it absorbs the egg mixture without becoming too mushy. Cut the bread into small cubes.

For a potato version, use frozen hash browns. Let them thaw slightly and squeeze out extra moisture with a clean towel if needed.

Both versions are delicious. Bread gives a soft, custard-like texture, while hash browns make the casserole heartier and more like a breakfast skillet bake.
