Marinated Cucumber, Tomato and Onion Salad: A Fresh Step-by-Step Summer Side Dish

Marinated Cucumber, Tomato and Onion Salad is a simple, refreshing dish made with crisp cucumbers, juicy tomatoes, thinly sliced onions, and a tangy vinegar-based dressing. It is light, colorful, and full of fresh flavor. The vegetables soak in the marinade, becoming slightly sweet, slightly sharp, and perfectly seasoned.

This salad is perfect for summer dinners, barbecues, picnics, potlucks, grilled meat, fried chicken, seafood, sandwiches, or any meal that needs a cool and bright side dish. It is easy to prepare, budget-friendly, and tastes even better after resting in the refrigerator.

Why This Salad Is So Good

The beauty of this recipe is its simplicity. Cucumbers bring crunch, tomatoes bring juiciness, and onions add a sharp savory bite. The marinade softens the onion, seasons the vegetables, and creates a light dressing that becomes more flavorful as it sits.

Unlike creamy salads, this version is fresh and clean. It does not feel heavy, and it can be made ahead of time. The longer it marinates, the more the flavors blend together.

Ingredients

For the Salad

  • 3 medium cucumbers, thinly sliced
  • 3 medium tomatoes, cut into wedges or chunks
  • 1 medium red onion or white onion, thinly sliced
  • 2 tablespoons chopped fresh parsley or dill, optional

For the Marinade

  • ½ cup white vinegar or apple cider vinegar
  • ¼ cup olive oil or vegetable oil
  • 2 tablespoons sugar, or to taste
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano, optional
  • 2 tablespoons water, optional if you want a milder marinade

Step 1: Choose Fresh Vegetables

Start with firm cucumbers, ripe tomatoes, and a fresh onion.

For cucumbers, you can use regular cucumbers, English cucumbers, or Persian cucumbers. English and Persian cucumbers have thinner skin and fewer seeds, so they work especially well.

For tomatoes, use ripe but firm tomatoes. If they are too soft, they may release too much juice and become mushy after marinating.

Red onion gives the salad a beautiful color and slightly sweet sharpness, but white onion also works well.

Step 2: Prepare the Cucumbers

Wash the cucumbers well.

You can peel them completely, leave the skin on, or peel them in stripes for a pretty look. If the cucumbers have thick or bitter skin, peeling is better.

Slice the cucumbers into thin rounds. Try to keep the slices even so they absorb the marinade evenly.

Place the cucumber slices in a large mixing bowl.
