Crispy Beef and Cheese Bourek: A Golden, Savory Pastry Recipe

Crispy Beef and Cheese Bourek is a delicious savory pastry filled with seasoned ground beef, melted cheese, onions, herbs, and warm spices. The outside is thin, flaky, and golden, while the inside is rich, juicy, and cheesy. It is perfect as an appetizer, snack, Ramadan side dish, party food, or light meal with salad and dipping sauce.

Bourek is popular in many North African and Mediterranean-style kitchens. It can be made with thin pastry sheets such as brik, spring roll wrappers, phyllo dough, or yufka. The filling can change from family to family, but beef and cheese is one of the most satisfying versions because it combines crispy pastry with a hearty, creamy center.

Ingredients

For the Filling

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil or butter
  • ½ teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon chili flakes, optional
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped cilantro, optional
  • 1 tablespoon tomato paste, optional
  • 1 egg, optional, to help bind the filling

For the Cheese

  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup cream cheese or soft cheese, optional

For Wrapping

  • 12 to 16 spring roll wrappers, brik sheets, phyllo sheets, or yufka sheets
  • 1 small bowl of flour paste, made from 1 tablespoon flour and 2 tablespoons water
  • Oil for frying, or melted butter/oil for baking

Step 1: Prepare the Beef Filling

Place a skillet over medium heat and add olive oil or butter. Once hot, add the chopped onion and cook for 2 to 3 minutes until soft and lightly golden.

Add the minced garlic and stir for about 30 seconds. Do not cook the garlic too long because it can burn and taste bitter.

Add the ground beef to the pan. Break it apart with a spoon and cook until it turns brown and no pink remains.

Step 2: Season the Beef

Once the beef is cooked, drain any extra grease from the pan.

Add salt, black pepper, paprika, cumin, garlic powder, onion powder, chili flakes, and tomato paste if using. Stir well so the beef is fully coated with the spices.

Cook for another 2 to 3 minutes. This helps the tomato paste and spices blend into the meat and gives the filling a deeper flavor.

Turn off the heat and add chopped parsley and cilantro. Let the mixture cool for 10 to 15 minutes before adding cheese.

Step 3: Add the Cheese

When the beef filling has cooled slightly, mix in mozzarella, cheddar, and cream cheese if using.

The mozzarella gives a stretchy texture, cheddar adds stronger flavor, and cream cheese makes the filling creamy. Do not add cheese while the beef is very hot, or it may melt too early and make the filling messy.

If the filling feels loose, add one beaten egg and mix well. This helps bind everything together, especially if you are frying the bourek.
