Lebkuchen Bars: A Traditional German-Inspired Spiced Holiday Dessert Recipe
Lebkuchen Bars are a delicious variation of the classic German Lebkuchen, a traditional Christmas cookie known for its warm spices, honey sweetness, nuts, and rich aroma. Instead of making individual cookies, this recipe transforms those beloved flavors into easy-to-cut dessert bars with a soft, moist center and a smooth glaze on top.
These bars are filled with the comforting flavors of ginger, cinnamon, cloves, nutmeg, and honey. They are perfect for holiday gatherings, Christmas dessert tables, afternoon coffee, gift boxes, or whenever you want a cozy homemade treat.
Unlike ordinary spice cakes, Lebkuchen Bars have a deeper flavor because the spices blend with honey, nuts, and citrus notes. After resting overnight, the flavors become even richer and more balanced.
What Makes Lebkuchen Bars Special?
Traditional Lebkuchen comes from Germany and has been enjoyed for centuries, especially during the Christmas season. The combination of spices and sweetness creates a unique flavor that is both festive and comforting.
These bars have:
- A soft, cake-like texture
- Warm holiday spices
- A delicate honey sweetness
- Crunch from chopped nuts
- A smooth glaze that adds sweetness and shine
They are easy to make because the batter is baked in one pan and sliced into squares after cooling.
Ingredients
For the Lebkuchen Bar Batter
- 2 cups all-purpose flour
- 1 cup almond flour or finely ground almonds
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground allspice (optional)
- ½ cup honey
- ½ cup brown sugar
- ½ cup granulated sugar
- 3 large eggs
- ½ cup unsalted butter, melted
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- ¾ cup finely chopped almonds or hazelnuts
For the Glaze
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice or orange juice
- 1 teaspoon vanilla extract
Optional:
- Melted dark chocolate for drizzling
- Sliced almonds for decoration
- Candied orange peel
Step 1: Prepare the Baking Pan
Preheat your oven to:
350°F (175°C)
Line a 9×13-inch baking pan with parchment paper. Leave some extra paper hanging over the sides so you can easily lift the bars after baking.
Lightly grease the parchment paper with butter or cooking spray.
Preparing the pan properly helps the bars come out clean and makes slicing easier.
Step 2: Mix the Dry Ingredients
In a large bowl, combine:
- Flour
- Almond flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
- Ginger
- Cloves
- Nutmeg
- Allspice
Whisk everything together until the spices are evenly distributed.
Mixing the spices into the flour first ensures that every bite has the same warm Lebkuchen flavor.
Step 3: Prepare the Wet Ingredients
In another bowl, combine:
- Melted butter
- Honey
- Brown sugar
- Granulated sugar
Whisk until smooth.
Add the eggs one at a time, mixing well after each addition.
Then add:
- Milk
- Vanilla extract
- Lemon zest
- Orange zest
Mix until the mixture becomes smooth and glossy.
The honey and citrus are important because they create the signature Lebkuchen aroma.
