- Optional: ½ teaspoon coconut extract for a stronger coconut flavor
Choosing the Coconut
You can use sweetened or unsweetened shredded coconut depending on how sweet you want the cookies. Sweetened coconut creates a softer, more dessert-like cookie, while unsweetened coconut gives you greater control over the sweetness.
For extra flavor, lightly toast the coconut before adding it to the dough. Toasting isn’t essential, but it gives the coconut a warm, nutty character that makes the finished cookies more flavorful.
Step 1: Toast the Coconut
If you’re using toasted coconut, begin by spreading the shredded coconut in a thin, even layer on a baking sheet.
Place it in an oven heated to 325°F (165°C) and toast for about 5–8 minutes, stirring once or twice.
Keep a close eye on it because coconut can go from lightly golden to burnt surprisingly quickly.
Once golden and fragrant, remove it from the oven and allow it to cool completely.
