Holiday Gumdrop Fruit Cake: A Colorful Old-Fashioned Treat for the Season
There is something wonderfully nostalgic about a Holiday Gumdrop Fruit Cake. Packed with bright, chewy gumdrops and tender dried fruit, this festive cake is a cheerful twist on traditional holiday fruit cake. Instead of relying entirely on dense candied fruit and nuts, this version gets its signature color, sweetness, and playful texture from colorful gumdrops.
The finished cake is moist, buttery, fragrant, and pleasantly chewy, with little bursts of color throughout every slice. It makes a beautiful addition to a Christmas dessert table and is also easy to wrap and give as a homemade holiday gift.
Why You’ll Love This Gumdrop Fruit Cake
This cake is especially appealing if you enjoy traditional holiday desserts but want something a little more fun and approachable. The gumdrops add a soft, chewy texture that contrasts beautifully with the tender cake.
It is also a great make-ahead dessert. After cooling completely, the cake can be wrapped tightly and allowed to rest, giving the flavors time to develop.
Ingredients
For the Cake
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract, optional
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup whole milk
- 1 cup chopped gumdrops
- 1 cup candied cherries or mixed candied fruit
- 3/4 cup raisins
- 1/2 cup chopped walnuts or pecans, optional
- 2 tablespoons all-purpose flour, for coating the fruit and gumdrops
For the Simple Glaze
- 1 cup powdered sugar
- 1–2 tablespoons milk or orange juice
- 1/2 teaspoon vanilla extract
Optional Decoration
- Extra colorful gumdrops
- Candied cherries
- Powdered sugar
- Chopped nuts
Step 1: Prepare the Pan
Preheat your oven to 325°F (165°C).
Grease a 9-inch loaf pan or a tube-style cake pan thoroughly. For easier removal, line the bottom with parchment paper and lightly grease the parchment as well.
Because this cake contains a generous amount of fruit and gumdrops, a slightly lower baking temperature helps the center cook properly without causing the outside to become overly dark.
Step 2: Prepare the Fruit and Gumdrops
Cut the gumdrops into small pieces using a lightly greased knife or kitchen scissors. Smaller pieces distribute more evenly throughout the batter.
Place the chopped gumdrops, candied fruit, raisins, and optional nuts in a bowl. Sprinkle them with the 2 tablespoons of flour and toss gently until everything is lightly coated.
This simple step helps prevent the heavier ingredients from sinking toward the bottom of the cake while it bakes.
Avoid using powdered sugar or flour-coated gumdrops that are meant for decorating. Choose ordinary soft, chewy gumdrops for the best texture.
Step 3: Cream the Butter and Sugar
Place the softened butter and granulated sugar in a large mixing bowl.
Beat them together for about 3–4 minutes, until the mixture becomes noticeably lighter and fluffy.
This step is important because incorporating air into the butter helps give the finished cake a lighter texture despite all the fruit and candy.
Step 4: Add the Eggs
Add the eggs one at a time, beating well after each addition.
Scrape down the sides of the bowl occasionally to make sure everything is evenly incorporated.
Add the vanilla extract and almond extract, if using. The almond extract gives the cake a classic bakery-style holiday aroma, but vanilla alone works perfectly well.
Step 5: Combine the Dry Ingredients
In another bowl, whisk together:
- Flour
- Baking powder
- Salt
- Cinnamon
- Nutmeg
The spices should be evenly distributed before they are added to the wet mixture.
