Cheesy Mini Meatloaf Muffins with Green Onions

There is something especially comforting about a classic meatloaf, but turning it into individual portions makes it even more convenient. These cheesy mini meatloaf muffins are baked in a muffin pan, giving each portion beautifully browned edges while keeping the center tender and flavorful.

Loaded with melted cheese and fresh green onions, these mini meatloaves are hearty enough for dinner but small and simple enough for an easy weeknight meal. They also cook faster than a traditional full-size meatloaf, making them a practical choice when you want comfort food without a long wait.

The mixture comes together with everyday ingredients, and you can easily adjust the seasonings or cheese to suit your family’s taste.

Why You’ll Love These Mini Meatloaves

The muffin-pan method does more than simply make the meatloaf cute. Dividing the mixture into individual portions creates more surface area, which means more deliciously browned edges.

Each little meatloaf also gets its own portion of melted cheese and savory seasoning. Green onions add a mild onion flavor and a fresh contrast to the rich ground beef.

They’re also easy to serve. Instead of slicing a large meatloaf and hoping every piece stays together, simply lift an individual portion from the pan and serve.

Ingredients

For the Meatloaf

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 3 green onions, thinly sliced
  • 2 tablespoons finely diced onion
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Topping

  • 1/3 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1 tablespoon sliced green onions

How to Make Cheesy Mini Meatloaf Muffins

Step 1: Prepare the Muffin Pan

Preheat your oven to 375°F (190°C).

Lightly grease a standard 12-cup muffin pan. You can use cooking spray or brush each cup with a small amount of oil.

Greasing the pan is important because the meat mixture contains cheese and can stick as it cooks.

Step 2: Make the Binder

In a large mixing bowl, combine the breadcrumbs and milk.

Let them sit for about 2 to 3 minutes. This allows the breadcrumbs to absorb the milk and helps create a softer meatloaf instead of a dense one.

Add the egg, ketchup, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and black pepper.

Stir until everything is evenly combined.

Step 3: Add the Beef and Flavorings

Add the ground beef, shredded cheddar, diced onion, and sliced green onions to the bowl.

Using clean hands or a large spoon, gently mix everything together.

Try not to overwork the meat. Mixing just until the ingredients are evenly distributed helps keep the finished meatloaves tender.

Step 4: Divide the Mixture

Divide the meat mixture among the prepared muffin cups.

For 12 portions, each cup will contain roughly the same amount of meat. Gently press the mixture into the cups without packing it down too firmly.

Leave a little space at the top of each cup because the meatloaf will release some juices as it cooks.
