Chocolate Caramel Coconut Dream Bars

If you love the combination of rich chocolate, buttery caramel, and sweet toasted coconut, these Chocolate Caramel Coconut Dream Bars are the kind of dessert that disappears quickly from the dessert table. They have a tender, buttery crust, a chewy coconut layer, a silky caramel center, and a smooth chocolate topping that comes together for a decadent, bakery-style treat.

Despite their impressive layers, these bars are surprisingly straightforward to make. The key is giving each layer enough time to set before adding the next one. Once chilled and sliced, they make beautiful squares that are perfect for holidays, parties, bake sales, or an afternoon treat with coffee.

Why You’ll Love These Bars

These dessert bars bring several textures together in every bite. The crust is crisp and buttery, the coconut layer is soft and chewy, the caramel is rich and creamy, and the chocolate topping adds a smooth finish.

They can also be prepared ahead of time, making them especially convenient when you’re entertaining.

Ingredients

For the buttery crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

For the coconut layer

  • 2 cups sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

For the caramel layer

  • 1 cup soft caramel candies, unwrapped
  • 3 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • ½ teaspoon vanilla extract
  • Pinch of salt

For the chocolate topping

  • 1 ½ cups semi-sweet chocolate chips
  • 2 tablespoons heavy cream or coconut oil
  • ½ teaspoon vanilla extract
  • Optional: ¼ cup toasted coconut for garnish
  • Optional: flaky sea salt for finishing

Step-by-Step Method

1. Prepare the baking pan

Preheat your oven to 350°F (175°C).

Line an 8-inch or 9-inch square baking pan with parchment paper, leaving some parchment hanging over two sides. This will make it much easier to lift the finished bars from the pan.

Lightly grease the parchment and the exposed sides of the pan.

2. Make the buttery crust

Place the softened butter and granulated sugar in a mixing bowl. Beat until the mixture becomes creamy and slightly fluffy.

Add the vanilla extract and mix briefly.

Gradually add the flour and salt, mixing just until a soft, crumbly dough forms. Avoid overmixing because you want the crust to remain tender rather than tough.

Transfer the dough to the prepared pan. Press it firmly and evenly across the bottom using your fingertips or the flat bottom of a measuring cup.

Bake for approximately 15–18 minutes, or until the edges are lightly golden.

Remove the crust from the oven and let it cool for several minutes.
