Caramel Pecan Chex Mix

Caramel Pecan Chex Mix

Caramel Pecan Chex Mix is the kind of sweet snack that disappears almost as quickly as you put it out. Crisp Chex cereal, crunchy pecans, and a buttery homemade caramel coating come together to create a golden, irresistible treat with just the right balance of sweetness and crunch.

This recipe is especially good for parties, holidays, movie nights, road trips, bake sales, or simply keeping a homemade snack on hand. The caramel coats every piece of cereal and pecan, then hardens into a delicate, crisp shell as the mixture cools. The result is crunchy, buttery, nutty, and wonderfully caramelized.

The best part is that it requires simple pantry ingredients and doesn’t involve complicated techniques. Once the caramel sauce is prepared, everything comes together in one bowl before being baked until perfectly crisp.

Why You’ll Love This Caramel Pecan Chex Mix

There are plenty of reasons this homemade snack deserves a place in your recipe collection:

  • Easy to make: The preparation requires only a few straightforward steps.
  • Crunchy and buttery: The cereal stays crisp beneath the caramel coating.
  • Rich caramel flavor: Brown sugar and butter create a deep, homemade caramel taste.
  • Nutty and satisfying: Pecans add extra crunch and a toasted flavor.
  • Perfect for sharing: Make a large batch for parties, gatherings, or gifts.
  • Make-ahead friendly: The finished mix keeps well when stored properly.

Ingredients

For the Chex Mix

  • 8 cups Chex cereal, such as corn or rice Chex
  • 2 cups pecan halves or roughly chopped pecans
  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

For an extra festive version, you can also add a handful of pretzels, popcorn, or your favorite chocolate candies after the caramel mixture has completely cooled.

Step-by-Step Instructions

Step 1: Prepare the Baking Sheet

Begin by preheating your oven to 250°F (120°C).

Line a large rimmed baking sheet with parchment paper or lightly grease it. Using parchment makes cleanup easier and helps prevent the caramel from sticking too firmly to the pan.

Set the prepared baking sheet aside while you make the snack mixture.

Step 2: Combine the Cereal and Pecans

Add the Chex cereal and pecans to a very large mixing bowl.

Gently toss them together so the pecans are distributed evenly throughout the cereal. Be careful not to crush the cereal pieces because you want plenty of whole, crunchy pieces in the finished snack.

If you’re adding other dry ingredients that will be baked with the caramel, such as pretzels, you can add them at this stage as well.

Step 3: Make the Caramel Sauce

Place the butter in a medium saucepan over medium heat and allow it to melt completely.

Add the brown sugar, corn syrup, and salt. Stir continuously until the ingredients are combined and the mixture begins to bubble.

Once it reaches a steady boil, continue cooking for about 2–3 minutes, stirring frequently.

The mixture should become smooth, glossy, and slightly thickened.

Avoid cooking the caramel for too long. You want it fluid enough to pour easily over the cereal while still developing a rich caramel flavor.
