Ingredients
For the hamburger steaks:
- 1 ½ pounds ground beef
- 1 small onion, finely diced
- 1 large egg
- ½ cup breadcrumbs

- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon Worcestershire sauce

- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 can (10.5 ounces) condensed cream of mushroom soup
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- 1 teaspoon Worcestershire sauce
Optional:
- ½ cup sliced mushrooms
- 2 tablespoons chopped fresh parsley
Step 1: Prepare the Ground Beef Mixture
Start by placing the ground beef in a large mixing bowl.
Add the finely diced onion, egg, breadcrumbs, salt, black pepper, garlic powder, onion powder, and Worcestershire sauce.
Gently mix everything together with your hands or a wooden spoon until the ingredients are evenly distributed.
Be careful not to overmix the meat. Working the ground beef too much can make the hamburger steaks dense instead of tender.
Step 2: Shape the Hamburger Steaks
Divide the mixture into approximately six equal portions.
Shape each portion into a thick oval or round patty, about ¾ inch thick. Try to keep the patties similar in size so they cook evenly.
If the mixture feels particularly soft, let the shaped patties rest in the refrigerator for about 10 to 15 minutes before browning. This helps them hold their shape.
Step 3: Brown the Hamburger Steaks

Reduce the heat to medium.
Add the butter to the same skillet, allowing it to melt into the flavorful browned bits left behind by the beef.
Add the sliced onions and cook for approximately 5 to 7 minutes, stirring occasionally.
The onions should become soft and lightly golden. If you are using mushrooms, add them during this step and cook until they soften.
Do not rush this part. Allowing the onions enough time to soften gives the gravy a sweeter, richer flavor.
Step 5: Make the Gravy
Sprinkle the flour over the cooked onions and stir continuously for about 1 minute.
This creates the base for a smooth gravy and helps eliminate the raw flour taste.
Slowly pour in the beef broth while stirring. Continue stirring until the mixture begins to thicken.
Add the condensed cream of mushroom soup, garlic powder, black pepper, salt, and Worcestershire sauce.
Stir until everything is thoroughly combined and the sauce becomes smooth.
