Baked Bacon Jalapeno Popper Eggrolls Recipe

 

INSTRUCTIONS:

  1. Preheat Your Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent the eggrolls from sticking.
  2. Prepare the Filling: In a large bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, chopped jalapenos, and crumbled bacon. Mix everything together until well combined. This mixture will be the delicious filling for your eggrolls.
  3. Assemble the Eggrolls: Lay an eggroll wrapper on a clean surface with one corner pointing towards you, forming a diamond shape. Spoon about 2 tablespoons of the filling mixture into the center of the wrapper. Fold the bottom corner up over the filling, then fold in the sides, and roll the wrapper up tightly to enclose the filling. Brush the top corner with the beaten egg to seal the eggroll.
  4. Arrange on the Baking Sheet: Place the assembled eggrolls on the prepared baking sheet, seam side down. Make sure to leave a little space between each eggroll to ensure even baking.
  5. Bake the Eggrolls: Lightly spray the tops of the eggrolls with cooking spray to help them crisp up. Bake in the preheated oven for 15-18 minutes or until the eggrolls are golden brown and crispy.
  6. Serve and Enjoy: Remove the eggrolls from the oven and let them cool for a few minutes before serving. These Baked Bacon Jalapeno Popper Eggrolls are delicious on their own, but you can also serve them with a side of ranch dressing, sour cream, or your favorite dipping sauce.
