Bacon and Cheese Quiche: A Rich, Creamy, and Comforting Classic

Few dishes are as wonderfully versatile as a homemade Bacon and Cheese Quiche. With its buttery pastry crust, savory bacon, melted cheese, and silky egg custard, quiche makes an excellent choice for breakfast, brunch, lunch, or even a simple dinner.

What makes this quiche especially appealing is the balance of textures and flavors. The crust provides a crisp, golden contrast to the soft filling, while the bacon adds a smoky, salty bite and the cheese brings richness and depth. Although it looks elegant enough for a special occasion, the recipe is surprisingly straightforward to prepare.

The key to a great quiche is controlling moisture and temperature. Cooking the bacon properly, avoiding an overly wet filling, and baking the quiche gently will help you achieve a creamy center without ending up with a soggy crust.

Why You’ll Love This Bacon and Cheese Quiche

This recipe is easy to customize while still being delicious in its simplest form. You can prepare it ahead of time, serve it warm or at room temperature, and pair it with almost anything from a fresh green salad to roasted vegetables.

The combination of bacon and cheese is naturally flavorful, so you don’t need a long list of ingredients. A little onion, black pepper, and a touch of seasoning are enough to complement the main ingredients without overpowering them.

Ingredients

For the Crust

  • 1 refrigerated 9-inch pie crust, or one homemade pastry crust
  • A little butter or cooking spray for the pie dish if needed

For the Filling

  • 6 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 6–8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Swiss cheese or Monterey Jack
  • 1/4 cup finely diced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley or chives, optional

Step-by-Step Method

Step 1: Prepare the Oven and Pie Dish

Begin by preheating your oven to 375°F (190°C).

If you’re using a prepared pie crust, place it into a 9-inch pie dish and gently press it against the bottom and sides. Avoid stretching the dough because stretched pastry can shrink during baking.

If necessary, lightly grease the pie dish before adding the crust.

Step 2: Cook the Bacon

Place the bacon in a skillet over medium heat. Cook it until it is browned and crisp, turning it occasionally so it cooks evenly.

Once cooked, transfer the bacon to a paper towel-lined plate to absorb excess grease. Allow it to cool for a few minutes before chopping it into small pieces.

You want the bacon to be nicely crisp because it will soften slightly once incorporated into the creamy custard.

Step 3: Cook the Onion

Leave about a teaspoon of bacon drippings in the skillet and add the diced onion.

Cook over medium heat for approximately 3–5 minutes, stirring occasionally, until the onion becomes soft and translucent.

Remove it from the heat and allow it to cool slightly.

Cooking the onion before adding it to the quiche gives it a sweeter, more developed flavor and prevents excess moisture from being released into the custard during baking.

Step 4: Prepare the Egg Mixture

Crack the eggs into a large mixing bowl.

Add the milk, heavy cream, salt, black pepper, and garlic powder. Whisk everything together until the mixture is smooth and evenly combined.

Avoid whisking excessively. You want the ingredients incorporated, but you don’t need to create a very foamy mixture.

The combination of whole milk and cream creates a custard that is rich without being excessively heavy.
