Unlike stovetop rice pudding, the baked version develops a delicate golden top while the rice slowly absorbs the sweet, fragrant custard underneath.

This recipe is especially lovely when served warm on a cool evening, although it is equally delicious chilled from the refrigerator. The secret is slow baking. Rice is gently cooked in a mixture of milk, sugar, and eggs, allowing the grains to become tender while the surrounding liquid gradually thickens into a creamy custard.

  • ¼ teaspoon salt
  • ½ cup raisins, optional

Choosing the Rice

Regular white rice works particularly well. Short- or medium-grain rice tends to produce a creamier pudding because it releases more starch during cooking.

Avoid using strongly flavored or heavily seasoned rice varieties. The goal is a mild, creamy base that allows the vanilla and cinnamon to shine.


How to Make Baked Rice Pudding Step by Step

Step 1: Prepare the Oven

Begin by preheating your oven to 350°F (175°C).

Lightly butter a medium-sized baking dish. A dish with enough room for the rice mixture to spread into an even layer is ideal.

Greasing the dish prevents the pudding from sticking and also adds a subtle buttery flavor around the edges.


Step 2: Rinse the Rice

Place the uncooked rice in a fine-mesh strainer and rinse it under cool running water.

Continue rinsing until the water becomes relatively clear.

This removes some excess surface starch and helps keep the finished pudding from becoming overly gummy.

Drain the rice thoroughly before continuing.


Step 3: Combine the Main Ingredients

In a large mixing bowl, whisk together:

  • Milk
  • Sugar
  • Eggs
  • Melted butter
  • Vanilla extract
  • Cinnamon
  • Salt

Whisk until the eggs are completely incorporated and the sugar begins to dissolve.

You don’t need to whip the mixture heavily. A smooth, evenly combined custard is all you need.


Step 4: Add the Rice

Stir the rinsed rice into the milk mixture.

If you’re using raisins, add them at this stage as well.

Give everything a gentle stir so the rice is evenly distributed throughout the liquid.
