- 500g (1 lb) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (400g / 15 oz) enchilada sauce
- 1 can (400g / 15 oz) diced tomatoes (drained)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 6–8 small flour or corn tortillas
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup canned black beans (optional, drained and rinsed)
- 1 cup corn kernels (optional)
- Fresh cilantro or green onions for garnish
🔪 Step 1: Prepare the Beef Filling
Start by heating a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
Once the beef is nearly done:
