  • Sweet, creamy, and refreshing.
  • Perfect for making ahead.
  • Easy to customize with different berries and toppings.

Ingredients

For the Cheesecake Mixture

  • 8 ounces (225 g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 1 tablespoon fresh lemon juice (optional, for brightness)

For the Fruit

  • 2 cups strawberries, washed, hulled, and sliced
  • 1½ cups blueberries
  • 1½ cups raspberries
  • 1 cup blackberries

Optional Garnishes

  • Graham cracker crumbs
  • White chocolate shavings
  • Fresh mint leaves
  • Lemon zest

Equipment Needed

  • Large mixing bowl
  • Electric hand mixer or stand mixer
  • Rubber spatula
  • Measuring cups and spoons
  • Serving bowl

Step-by-Step Instructions

Step 1: Prepare the Fruit

Wash all the berries thoroughly under cool running water. Pat them completely dry using paper towels. Removing excess moisture is important because water can make the cheesecake mixture thinner.

Hull and slice the strawberries into bite-sized pieces while leaving the smaller berries whole.

Place all the prepared fruit into a large serving bowl and refrigerate while preparing the filling.

Step 2: Soften the Cream Cheese

Allow the cream cheese to sit at room temperature for about 30 minutes. Softened cream cheese blends much more smoothly and helps create a silky filling without lumps.

Step 3: Make the Cheesecake Base

In a large mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice if using.

Beat with an electric mixer on medium speed for 2–3 minutes until the mixture becomes smooth, creamy, and fluffy.

Scrape down the sides of the bowl to ensure everything is evenly mixed.
