Brown Sugar Glazed Bacon-Wrapped Scallops: A Sweet, Smoky, Elegant Appetizer

Brown Sugar Glazed Bacon-Wrapped Scallops are a rich and flavorful appetizer made with tender sea scallops wrapped in crispy bacon and brushed with a sweet, buttery brown sugar glaze. The key is to partially cook the bacon first, wrap it around the scallops, then bake or broil everything until the bacon is crisp and the scallops are just cooked through.

Why This Recipe Works

Scallops cook very quickly, while bacon takes longer to become crisp. If raw bacon is wrapped around raw scallops, the scallops may overcook before the bacon becomes crispy. That is why the bacon is first partially cooked. This gives the bacon a head start, so it can finish cooking at the same time as the scallops.

The brown sugar glaze adds sweetness and shine. When heated, the sugar melts into the butter and seasoning, creating a sticky, caramelized coating that balances the smoky bacon and naturally sweet scallops.

Ingredients

For the Scallops

  • 1 pound large sea scallops
  • 8 to 10 slices bacon
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • Toothpicks, soaked in water for 10 minutes

For the Brown Sugar Glaze

  • 3 tablespoons brown sugar
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Pinch of cayenne pepper, optional

  • Chopped parsley
  • Lemon wedges
  • Extra cracked black pepper

Step 1: Prepare the Scallops

Start by checking the scallops. If they have a small tough side muscle attached, gently pull it off and discard it.

Pat the scallops very dry with paper towels. This step is important because wet scallops release water while cooking, which can prevent the bacon from crisping and the glaze from caramelizing.

Season the scallops lightly with salt, black pepper, and garlic powder. Do not use too much salt because bacon is already salty.

Step 2: Partially Cook the Bacon

Preheat the oven to 400°F / 200°C.

Place the bacon slices on a baking sheet lined with parchment paper or foil. Bake for about 8 to 10 minutes, just until the bacon begins to render fat and soften.

The bacon should not be fully crispy yet. It needs to stay flexible so you can wrap it around the scallops.

Remove the bacon from the oven and place it on paper towels to drain slightly. Let it cool just enough to handle.

Step 3: Make the Brown Sugar Glaze

In a small bowl, combine the brown sugar, melted butter, maple syrup or honey, Dijon mustard, smoked paprika, garlic powder, black pepper, and cayenne pepper if using.

Mix until smooth.

The glaze should be thick but brushable. If it feels too thick, warm it for a few seconds or add a tiny splash of melted butter.
