Caramel Delite Bars: A Rich Coconut, Caramel, and Chocolate Treat

Caramel Delite Bars are a delicious dessert made with a buttery cookie base, a chewy caramel-coconut topping, and a smooth chocolate drizzle. They are inspired by the classic combination of toasted coconut, sweet caramel, and rich chocolate. These bars are perfect for parties, family gatherings, lunchbox treats, or whenever you want something sweet and homemade.

The best thing about Caramel Delite Bars is that they look impressive but are quite simple to make. Each layer adds a different texture. The base is soft and slightly crisp, the coconut caramel layer is chewy and sweet, and the chocolate gives the bars a rich finishing touch.

Ingredients Needed

For the Base

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

For the Caramel Coconut Layer

  • 2 ½ cups shredded coconut
  • 1 ½ cups soft caramel candies or caramel bits
  • 3 tablespoons heavy cream or milk
  • ¼ teaspoon salt

For the Chocolate Topping

  • 1 ½ cups semi-sweet chocolate chips
  • 1 teaspoon coconut oil or butter

Step 1: Prepare the Baking Pan

Start by preheating your oven to 350°F, or 175°C. Line a square or rectangular baking pan with parchment paper. Leave a little extra paper hanging over the sides so you can lift the bars out easily after baking.

Lightly grease the parchment paper with butter or cooking spray. This helps prevent the caramel layer from sticking.

Step 2: Make the Buttery Base

In a large mixing bowl, add the softened butter and sugar. Beat them together until the mixture becomes light and creamy. This step helps create a soft and rich base.

Next, add the vanilla extract and mix again. Then add the flour and salt. Mix until a dough begins to form. The dough may look crumbly at first, but it should come together when pressed.

Transfer the dough into the prepared baking pan. Press it evenly across the bottom using your fingers or the back of a spoon. Try to make the layer smooth and even so the bars bake properly.

Step 3: Bake the Base

Place the pan in the preheated oven and bake for about 18 to 22 minutes. The base should look lightly golden around the edges. Do not overbake it, because it will become too hard after cooling.

Once baked, remove the pan from the oven and let the base cool slightly while you prepare the topping.
