Cheddar Bacon Ranch Pasta Salad

Cheddar Bacon Ranch Pasta Salad is the kind of chilled side dish that disappears quickly at potlucks, barbecues, family gatherings, and casual weeknight dinners. It brings together tender pasta, crispy bacon, sharp cheddar cheese, crunchy vegetables, and a creamy ranch dressing in every bite. The combination is rich and savory, while the fresh vegetables add just enough crunch to keep the salad from feeling too heavy.

What makes this pasta salad especially convenient is that it can be prepared ahead of time. In fact, giving it a little time in the refrigerator allows the ranch dressing to soak into the pasta and helps all of the flavors come together.

Why You’ll Love This Pasta Salad

  • Creamy and flavorful: Ranch dressing gives the salad a tangy, herby finish.
  • Loaded with texture: Crispy bacon, crunchy vegetables, and tender pasta create satisfying contrast.
  • Easy to prepare: Most of the ingredients require very little preparation.
  • Great for gatherings: The recipe makes enough for a crowd and travels well when kept chilled.
  • Make-ahead friendly: The flavor develops as the salad rests in the refrigerator.
  • Easy to customize: You can add vegetables, herbs, or extra cheese according to your taste.

Ingredients

For approximately 6–8 servings, you’ll need:

For the Pasta Salad

  • 12 ounces (340 g) rotini or bow-tie pasta
  • 8 ounces (225 g) bacon
  • 1 cup shredded sharp cheddar cheese
  • ½ cup finely diced red onion
  • 1 cup halved cherry tomatoes
  • ½ cup diced cucumber
  • ½ cup diced bell pepper
  • ¼ cup chopped fresh parsley
  • 2 green onions, thinly sliced

For the Ranch Dressing

  • ¾ cup mayonnaise
  • ½ cup sour cream
  • ½ cup ranch dressing
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon freshly ground black pepper
  • 1–2 tablespoons milk, if needed to thin the dressing

You can also add a small pinch of salt if necessary, although the bacon, cheese, and ranch dressing already provide plenty of seasoning.

How to Make Cheddar Bacon Ranch Pasta Salad

Step 1: Cook the Bacon

Begin by preparing the bacon because it needs time to cool before being added to the salad.

Place the bacon in a large skillet over medium heat. Cook it until it is deeply golden and crisp, turning as needed so both sides cook evenly.

Transfer the cooked bacon to a plate lined with paper towels. Allow it to cool completely.

Once cooled, chop or crumble the bacon into small pieces.

Helpful tip

For this recipe, crispy bacon works better than soft bacon because the crunch provides an important contrast to the creamy pasta. Avoid adding hot bacon directly to the salad because its heat can soften the vegetables and affect the dressing.

Step 2: Cook the Pasta

Bring a large pot of generously salted water to a boil.

Add the pasta and cook according to the package directions until al dente. The pasta should be tender but still have a slight firmness when bitten.

Once cooked, drain the pasta thoroughly.

Immediately rinse it under cold running water until the pasta has cooled completely.

Transfer the pasta to a large mixing bowl and allow any excess water to drain away.

Why rinse the pasta?

For a cold pasta salad, rinsing removes excess surface starch and quickly cools the pasta. This helps prevent the noodles from becoming sticky and makes it easier for the creamy dressing to coat them evenly.

Step 3: Prepare the Vegetables

While the pasta is cooling, prepare the vegetables.

Dice the red onion and bell pepper into small pieces. Halve the cherry tomatoes and dice the cucumber into bite-sized pieces.

Thinly slice the green onions and chop the fresh parsley.

Try to keep the vegetables relatively uniform in size. Smaller pieces distribute more evenly throughout the pasta, so you get a little bit of everything in each serving.

If your cucumber contains a large amount of seeds or moisture, you can remove the seeds before dicing it. This helps prevent the finished salad from becoming watery.

Step 4: Make the Ranch Dressing

In a medium bowl, combine the mayonnaise, sour cream, and ranch dressing.

Add the garlic powder, onion powder, and black pepper.

Whisk everything together until the dressing is completely smooth.

If the dressing seems too thick to coat the pasta easily, add 1 tablespoon of milk and whisk again. Add another tablespoon only if necessary.

Taste the dressing and adjust the seasoning according to your preference.

Flavor tip

For a stronger ranch flavor, add a little extra ranch dressing or a small amount of dry ranch seasoning mix. If you prefer a tangier dressing, a teaspoon of lemon juice can also brighten the flavor.
