Cheddar Bacon Savory Cookies: A Crispy, Cheesy Snack Recipe
Cheddar Bacon Savory Cookies are buttery, crisp, and full of rich flavor. Unlike sweet cookies, these are made with sharp cheddar cheese, smoky bacon, herbs, and a tender shortbread-style dough. They are perfect as a party appetizer, snack, lunchbox treat, soup side, or a savory bite to serve with tea, coffee, or cold drinks.
These cookies have a crumbly texture, golden edges, and a deep cheesy flavor. The bacon adds saltiness and smokiness, while the cheddar melts into the dough and gives every bite a rich, savory taste. They are simple to prepare, but they taste special enough for guests.
Ingredients
For the Savory Cookie Dough
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- 1 ½ cups sharp cheddar cheese, finely shredded
- 6 slices cooked bacon, finely chopped
- 1 large egg yolk
- 2 tablespoons cold milk or cream
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon paprika
- ½ teaspoon dried parsley or chives
- ¼ teaspoon cayenne pepper, optional
Optional Topping
- Extra shredded cheddar
- A pinch of paprika
- Chopped chives
- Coarse black pepper
Step 1: Cook the Bacon
Start by cooking the bacon until it is crispy. You can cook it in a skillet, oven, or air fryer.
Once the bacon is cooked, place it on paper towels to remove extra grease. Let it cool completely, then chop it into small pieces.
Do not add hot or greasy bacon directly into the dough. Too much grease can make the cookies spread too much, and warm bacon can soften the butter.
Step 2: Prepare the Cheese
Use sharp cheddar cheese for the strongest flavor. Finely shredded cheese works best because it blends into the dough more evenly.
Freshly grated cheddar is better than pre-shredded cheese because it melts better and gives the cookies a smoother texture.
Set the cheese aside while preparing the dry ingredients.
Step 3: Mix the Dry Ingredients
In a large mixing bowl, combine the flour, salt, black pepper, garlic powder, onion powder, paprika, dried parsley, and cayenne pepper if using.
Stir everything together until the seasoning is evenly mixed with the flour.
This dry mixture gives the cookies flavor from the inside, not just on the surface.
Step 4: Add the Cold Butter
Add the cold cubed butter to the flour mixture.
Use your fingertips, a pastry cutter, or a fork to rub the butter into the flour. Continue mixing until the mixture looks like coarse crumbs.
Small pieces of butter should still be visible. These butter pieces help create a tender, crumbly cookie texture when baked.
Do not melt the butter. Cold butter is important for savory cookies because it keeps them crisp and prevents them from becoming oily.
Step 5: Add Cheddar and Bacon
Add the shredded cheddar cheese and chopped bacon to the bowl.
Mix gently until both are evenly distributed through the flour and butter mixture.
At this stage, the dough will still look crumbly, but the cheese and bacon should be spread throughout.
