Cheesy Baked Taco Dip: A Warm, Creamy Party Appetizer Recipe

Cheesy Baked Taco Dip is a rich, hot, and flavorful appetizer made with seasoned ground beef, creamy cheese, taco spices, salsa, beans, and melted cheese on top. It has all the flavors of tacos, but instead of serving them in shells, everything is layered into a baking dish and baked until hot, bubbly, and golden.

This dip is perfect for game nights, parties, family gatherings, movie nights, potlucks, or casual dinners. It is easy to prepare, easy to serve, and always popular because it is creamy, cheesy, spicy, and satisfying.

Why This Taco Dip Is So Delicious

The best part of this recipe is the layers. The bottom layer is creamy and smooth, usually made with cream cheese and sour cream. The middle layer is filled with seasoned taco meat, salsa, beans, and spices. The top layer is covered with shredded cheese that melts into a golden, bubbly topping.

When served warm with tortilla chips, every scoop gives you creamy cheese, savory beef, taco seasoning, and melted cheese in one bite.

Ingredients

For the Meat Layer

  • 1 pound ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning, or 2 tablespoons homemade taco seasoning
  • ½ cup water
  • ½ cup salsa
  • 1 cup black beans or refried beans, optional
  • ½ cup corn, optional

For the Creamy Base

  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise, optional for extra richness
  • ½ cup salsa
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper

For the Cheese Topping

  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese or mozzarella
  • ½ cup pepper jack cheese, optional for spice

Optional Toppings After Baking

  • Chopped tomatoes
  • Sliced jalapeños
  • Green onions
  • Black olives
  • Fresh cilantro
  • Sour cream
  • Guacamole
  • Shredded lettuce
  • Crushed tortilla chips

Step 1: Prepare the Baking Dish

Preheat your oven to 375°F / 190°C.

Choose a medium baking dish, such as an 8×8 inch dish, a small casserole dish, or a pie dish.

Lightly grease the dish with cooking spray or a little oil. This helps prevent the cheese from sticking and makes cleanup easier.

Step 2: Cook the Ground Beef

Place a skillet over medium-high heat. Add the ground beef and break it apart with a spoon.

Cook until the beef is browned and no pink remains. This usually takes about 6 to 8 minutes.

If there is too much grease in the pan, drain it before continuing. Removing extra grease keeps the dip from becoming oily.

Step 3: Add Onion and Garlic

Add the diced onion to the cooked beef. Cook for 2 to 3 minutes until the onion becomes soft.

Add the minced garlic and cook for another 30 seconds.

Garlic burns quickly, so stir it gently and do not cook it too long.
