Instructions

Step 1: Prepare the Crust and Preheat the Oven

  1. Preheat the Oven: Set your oven to 375°F (190°C) and allow it to preheat while you prepare the filling.
  2. Prepare the Pie Crust: Roll out the pie crust and press it into a 9-inch pie dish. Trim any excess crust and crimp the edges if desired. Set aside.

Step 2: Cook the Beef and Potato Filling

  1. Cook the Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until they are soft and starting to brown. Remove from the skillet and set aside.
  2. Cook the Beef: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and red bell pepper, and sauté for about 3-4 minutes until softened. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat.

Step 3: Make the Creamy Cheese Sauce

  1. Create a Roux: In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and whisk constantly for 1-2 minutes until the mixture is smooth and lightly golden.
  2. Add the Milk: Slowly pour in the milk while continuing to whisk, ensuring there are no lumps. Cook for about 2-3 minutes until the sauce begins to thicken.
  3. Add the Cheese: Remove the saucepan from heat and stir in the shredded cheddar cheese and sour cream. Season with salt and pepper to taste. If the sauce is too thick, you can add a little more milk until it reaches your desired consistency.

Step 4: Assemble the Pie

  1. Layer the Filling: Spoon the beef and potato mixture into the prepared pie crust, spreading it out evenly.
  2. Pour the Sauce: Pour the creamy cheese sauce over the beef and potato filling, using a spoon to spread it evenly.
  3. Top with Cheese: Sprinkle the shredded cheddar and mozzarella cheese evenly over the top of the pie.

Step 5: Bake the Pie

  1. Bake: Place the pie in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
  2. Cool and Serve: Remove the pie from the oven and let it cool for 5-10 minutes before slicing and serving.

  • Add More Veggies: Feel free to add extra vegetables like mushrooms, zucchini, or spinach to the filling for added flavor and nutrition.
