- 1 medium head green cabbage, chopped
- 1 medium onion, finely chopped

- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried thyme or Italian seasoning
- 1 cup sour cream
- ½ cup mayonnaise or cream cheese
- 1 cup heavy cream or milk
- 2 cups shredded cheddar cheese
- ½ cup mozzarella cheese, optional
- ¼ cup grated parmesan cheese, optional
For the Topping
- 1 cup crushed buttery crackers or breadcrumbs
- 2 tablespoons melted butter
- ½ cup shredded cheddar cheese
Step 1: Prepare the Cabbage
Start by removing any damaged outer leaves from the cabbage. Cut the cabbage in half, remove the hard core, and chop the leaves into medium pieces.
Do not chop the cabbage too finely. Larger pieces give the casserole a better texture and prevent it from becoming mushy.
Rinse the chopped cabbage and drain it well. Too much water can make the casserole watery, so pat the cabbage dry if needed.
Step 2: Cook the Onion and Garlic
Place a large skillet or pot over medium heat. Add the butter and olive oil.
Once the butter melts, add the chopped onion. Cook for 3 to 4 minutes until the onion becomes soft and slightly golden.
Add the minced garlic and cook for another 30 seconds, stirring constantly. Garlic burns quickly, so do not cook it too long.

Step 3: Soften the Cabbage
Add the chopped cabbage to the skillet. It may look like a lot at first, but cabbage shrinks as it cooks.
Season with salt, black pepper, paprika, garlic powder, onion powder, and dried thyme or Italian seasoning.
Cook the cabbage for 8 to 10 minutes, stirring occasionally, until it begins to soften. It does not need to be fully cooked because it will continue baking in the oven.
The goal is to reduce some moisture and give the cabbage a tender texture before mixing it with the sauce.
