For the French Onion Sauce

  • 3 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard, optional
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 tablespoon flour or cornstarch slurry for thickening

For the Casserole Topping

  • 1 ½ cups shredded mozzarella cheese
  • 1 cup shredded Swiss cheese or Gruyère cheese
  • ¼ cup grated parmesan cheese
  • Fresh parsley for garnish

Step 1: Prepare the Meatball Mixture

In a large bowl, combine the ground beef, breadcrumbs, egg, parmesan cheese, garlic, salt, black pepper, onion powder, thyme, and parsley.

Mix gently using your hands or a spoon. Do not overmix, because overworked meatballs can become tough.

The mixture should hold together easily. If it feels too wet, add a little more breadcrumbs. If it feels too dry, add one tablespoon of milk or broth.

Step 2: Shape the Meatballs

Take small portions of the meat mixture and roll them into evenly sized meatballs.

Medium-size meatballs work best for this casserole because they cook evenly and are easy to serve. You should get about 20 to 24 meatballs, depending on size.

Place the shaped meatballs on a plate or tray while you heat the pan.

Step 3: Brown the Meatballs

Heat a large skillet over medium-high heat. Add a small amount of oil.

Place the meatballs in the skillet and brown them on all sides. They do not need to cook fully at this stage because they will finish cooking in the oven.

Browning is important because it adds flavor and gives the meatballs a better texture.

Once browned, remove the meatballs from the skillet and set them aside.
