- 4 cups cooked white rice, preferably cooled
- 2 cups rice puffs or puffed rice
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cloves garlic, finely minced
- 1 small onion, finely diced
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1 1/2 cups shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
For the topping:
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1/2 cup rice puffs
- 1 tablespoon melted butter
- A little chopped parsley for finishing
Step 1: Prepare the Oven and Baking Dish
Begin by preheating your oven to 375°F (190°C).
Lightly grease a medium-to-large casserole dish with butter or cooking spray. A baking dish around 9 × 13 inches works well.
Greasing the dish helps prevent the cheesy rice mixture from sticking and also makes serving much easier.
Step 2: Prepare the Garlic Mixture
Place a large skillet over medium heat and add the butter and olive oil.

There is no need to boil the sauce. Gentle heat is enough to melt the cheese without making the mixture overly thick or greasy.
Step 4: Combine the Rice and Sauce
Place the cooked rice in a large mixing bowl.
Pour the warm cheesy garlic sauce over the rice.
Using a large spoon or spatula, gently fold everything together until the rice is evenly coated.
Try not to mash the rice as you mix. Keeping the grains relatively separate gives the finished casserole a better texture.
Taste the mixture and adjust the seasoning if necessary.
