Cheesy Garlic Swirl Rolls: Soft, Buttery, and Packed With Flavor
There is something irresistible about freshly baked bread filled with melted cheese and fragrant garlic. Cheesy Garlic Swirl Rolls take that comforting combination and turn it into soft, golden spirals that are perfect as a snack, appetizer, side dish, or addition to a cozy dinner.
Each roll is made from a tender homemade dough that is spread with garlic butter and plenty of cheese, then rolled tightly and sliced into beautiful swirls. As the rolls bake, the cheese melts into the layers while the garlic butter soaks into the dough, creating crisp golden edges and a soft, flavorful center.
The recipe is straightforward, but a few small techniques—especially how you knead, roll, fill, and slice the dough—make a big difference in the final texture.
What Makes These Rolls Special?
Unlike ordinary garlic bread, these rolls have several layers of flavor. The garlic butter is tucked inside the dough rather than simply brushed over the surface, so every bite contains buttery garlic flavor.
The cheese also becomes part of the spiral. As it melts, it creates delicious pockets between the layers while helping the rolls hold their shape.
For the best result, use a cheese that melts smoothly. Mozzarella gives you that classic stretchy texture, while cheddar adds a stronger flavor. You can also combine several cheeses for a richer filling.
Ingredients
For the Dough
- 3 cups all-purpose flour
- 2 ¼ teaspoons instant or active dry yeast
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- ¾ cup warm milk
- ¼ cup warm water
- 2 tablespoons melted butter
- 1 large egg
For the Garlic-Cheese Filling
- 4 tablespoons softened unsalted butter
- 3–4 garlic cloves, finely minced
- 1 tablespoon chopped fresh parsley
- 1 ½ cups shredded mozzarella
- ½ cup shredded cheddar
- ¼ teaspoon black pepper
- A small pinch of salt, if needed
For the Finish
- 1 tablespoon melted butter
- 1 small garlic clove, finely grated or minced
- 1 tablespoon chopped parsley
- 2 tablespoons grated Parmesan, optional
Step 1: Prepare the Dough
Begin by warming the milk and water until they feel comfortably warm rather than hot. If the liquid is too hot, it can interfere with the yeast.
Combine the warm milk, warm water, sugar, and yeast in a large mixing bowl. If you’re using active dry yeast, allow the mixture to sit for about 5–10 minutes until it becomes slightly foamy.
Add the melted butter and egg, then mix gently.
Gradually add the flour and salt, stirring until a soft, slightly sticky dough begins to form.
Don’t add all the flour at once. Depending on the flour and humidity, you may need slightly more or less than the stated amount.
Step 2: Knead Until Smooth
Transfer the dough to a lightly floured surface and knead for approximately 7–10 minutes.
You’re looking for dough that feels:
- Smooth
- Soft
- Elastic
- Slightly tacky but not excessively sticky
If the dough sticks heavily to your hands, add flour a tablespoon at a time. Avoid adding too much flour because an overly stiff dough can produce dense rolls.
You can also knead the dough using a stand mixer fitted with a dough hook for about 5–7 minutes on low to medium speed.
Step 3: Let the Dough Rise
Place the dough in a lightly greased bowl and turn it once so the surface is lightly coated.
Cover the bowl with a clean kitchen towel or plastic wrap and leave it somewhere warm.
Allow the dough to rise for approximately 1–1½ hours, or until it has roughly doubled in size.
The exact time depends on the temperature of your kitchen. A warmer environment will generally make the dough rise faster.
Step 4: Make the Garlic Butter
While the dough is rising, prepare the filling.
Combine the softened butter, minced garlic, parsley, and black pepper in a small bowl.
Mix until everything is evenly distributed.
The butter should be soft enough to spread easily but shouldn’t be completely melted. Soft butter will create a more even layer across the dough.
