Cheesy Hash Brown Pie: A Golden, Comforting Dish Made Step by Step

There are few dishes that capture the feeling of homemade comfort quite like a warm, cheesy hash brown pie. Combining the crisp texture of golden potatoes with the rich creaminess of melted cheese, this dish transforms simple ingredients into something that feels special enough for a family gathering yet easy enough for a weekday meal.

Cheesy Hash Brown Pie is a delicious combination of a crispy potato crust and a savory, creamy filling. The outside develops a beautiful golden crust, while the inside remains soft, cheesy, and full of flavor. It can be served as a breakfast centerpiece, a satisfying brunch dish, or even a comforting dinner paired with a fresh salad or roasted vegetables.

The beauty of this recipe lies in its flexibility. You can add vegetables, herbs, or different types of cheese to create your own version while keeping the classic balance of crispy potatoes and creamy cheese.

Ingredients

For the Hash Brown Crust:

  • 4 cups frozen shredded hash browns, thawed and drained
  • 3 tablespoons melted butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg, lightly beaten

For the Cheesy Filling:

  • 2 cups shredded cheese (cheddar, mozzarella, or a combination)
  • 4 large eggs
  • 1 cup milk or heavy cream
  • ½ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley or green onions (optional)

Optional Additions:

  • Cooked bacon pieces
  • Diced ham
  • Sautéed mushrooms
  • Spinach
  • Bell peppers
  • Extra herbs

Step-by-Step Preparation Method

Step 1: Prepare the Hash Brown Crust

Begin by preheating your oven to 400°F (200°C). Preparing the oven first ensures that the crust starts cooking immediately and becomes crisp.

Place the thawed hash browns in a clean kitchen towel and squeeze out as much moisture as possible. This step is very important because excess water can prevent the crust from becoming crispy.

In a large bowl, combine the drained hash browns with melted butter, salt, pepper, and the beaten egg. Mix everything thoroughly until the potatoes are evenly coated.

The egg works as a binder, helping the hash browns hold their shape while baking, while the butter adds richness and helps create a golden crust.

Step 2: Shape and Bake the Potato Crust

Grease a 9-inch pie dish with butter or cooking spray. Press the hash brown mixture firmly into the bottom and sides of the dish, creating an even layer.

Try to make the edges slightly thicker because they will form the crispy border of the pie.

Bake the crust for 20–25 minutes until it begins to turn golden and firm. Pre-baking the crust prevents it from becoming soft after adding the creamy filling.

Once baked, remove it from the oven and allow it to cool slightly while preparing the filling.
