Cheesy Hashbrown Casserole

There are some side dishes that quietly become the star of the table, and cheesy hashbrown casserole is one of them. Creamy on the inside, golden and bubbling on top, and packed with tender shredded potatoes and plenty of melted cheese, this comforting casserole is the kind of dish that disappears quickly at family dinners, holiday gatherings, brunches, and potlucks.

What makes this casserole especially appealing is how simple it is to prepare. Frozen hashbrowns save time, while a creamy sauce brings everything together without requiring a complicated homemade cheese sauce. Once the ingredients are mixed, the oven does most of the work, transforming the mixture into a rich, hearty casserole with crisp edges and a beautifully browned top.

Why You’ll Love This Recipe

This cheesy hashbrown casserole is easy enough for a weeknight dinner but comforting enough for a special occasion. It uses straightforward ingredients, requires very little preparation, and can be assembled ahead of time.

The combination of potatoes, creamy sauce, and cheese gives every spoonful a satisfying texture. The potatoes remain soft and tender while the cheese melts into the mixture, creating pockets of gooey goodness throughout the casserole.

Ingredients

For the casserole:

  • 1 bag (30 ounces) frozen shredded hashbrowns, thawed
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1/2 cup finely diced yellow onion
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the topping:

  • 1 cup shredded cheddar cheese
  • 2 tablespoons melted butter
  • 1 cup crushed buttery crackers or cornflakes

Step 1: Prepare the Hashbrowns

If you’re using frozen shredded hashbrowns, thaw them completely before beginning. Once thawed, gently squeeze out excess moisture using clean kitchen towels or paper towels.

This step is important because extra water can make the finished casserole loose or watery. The goal is to remove enough moisture while keeping the potatoes intact.

If you have time, you can thaw the hashbrowns overnight in the refrigerator.

Step 2: Preheat the Oven

Preheat your oven to 350°F (175°C).

Lightly grease a 9-by-13-inch baking dish with butter or nonstick cooking spray. Greasing the dish makes serving easier and helps prevent the creamy potato mixture from sticking to the sides.

Step 3: Make the Creamy Mixture

In a large mixing bowl, combine the condensed cream of chicken soup, sour cream, melted butter, and milk.

Whisk until the ingredients are smooth and evenly combined.

Add the garlic powder, onion powder, salt, and black pepper. Stir again so the seasonings are distributed throughout the sauce.

The mixture should be creamy and pourable but not overly thin.
