Cheesy Sausage Breakfast Casserole: A Hearty Step-by-Step Morning Bake

Cheesy Sausage Breakfast Casserole is a warm, filling, and flavorful breakfast dish made with savory sausage, eggs, cheese, milk, bread or hash browns, and simple seasonings. It is the kind of recipe that brings comfort to the table without requiring complicated cooking. Everything is layered in one baking dish, then baked until golden, fluffy, and cheesy.

This casserole is perfect for weekend breakfasts, brunch gatherings, holidays, family mornings, or meal prep. It can also be assembled the night before and baked the next morning, making it a great choice when you want a homemade breakfast with less morning work.

Why This Breakfast Casserole Is So Good

The beauty of this casserole is in the balance of textures and flavors. The sausage adds a rich, savory taste. The eggs create a soft, fluffy base. The cheese melts through the layers and gives every bite a creamy, satisfying finish. Bread cubes or hash browns help absorb the egg mixture and make the casserole hearty enough to serve as a full meal.

It is simple, customizable, and easy to serve. You can keep it classic with sausage and cheddar, or add vegetables, herbs, peppers, or different cheeses to make it your own.

Ingredients

Main Ingredients

  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream, or use extra milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 cups cubed bread, or 3 cups frozen hash browns
  • 1 small onion, finely chopped
  • 1 small bell pepper, diced, optional
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon chopped parsley or green onions, optional

Optional Add-Ins

  • Cooked bacon pieces
  • Mushrooms
  • Spinach
  • Jalapeños
  • Diced tomatoes
  • Pepper jack cheese
  • Parmesan cheese

Step 1: Prepare the Baking Dish

Preheat the oven to 350°F / 175°C.

Grease a 9×13 inch baking dish with butter or non-stick spray. Make sure the bottom and sides are coated well so the casserole does not stick after baking.

If you are making the casserole the night before, prepare the dish the same way, then cover and refrigerate it before baking.

Step 2: Cook the Sausage

Place a large skillet over medium heat.

Add the breakfast sausage and break it apart with a spoon or spatula. Cook until the sausage is browned and fully cooked.

If the sausage releases too much grease, drain the excess fat. Leave just a little behind for flavor.

The sausage should be crumbly, golden, and fragrant. This step gives the casserole its main savory flavor.

Step 3: Add Onion, Garlic, and Vegetables

Add the chopped onion to the skillet with the cooked sausage.

Cook for 2 to 3 minutes until the onion becomes soft. Add the garlic and cook for another 30 seconds.

If using bell pepper, mushrooms, or spinach, add them at this stage. Cook until the vegetables soften and any extra moisture evaporates.

This is important because watery vegetables can make the casserole soggy.
