Ingredients
For approximately 9–12 casserole squares, you’ll need:
Main Ingredients
- 1 pound Italian sausage or breakfast sausage, casings removed
- 2 cups cooked long-grain white rice
- 1 small onion, finely diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup frozen or fresh corn
- 1 can condensed cream of chicken soup
- ½ cup sour cream
- ½ cup milk
- 2 cups shredded cheddar cheese, divided
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- ½ teaspoon black pepper
- Salt, to taste
- 1 tablespoon olive oil, if needed
- 2 tablespoons chopped fresh parsley, optional
For the Baking Dish
- Cooking spray or a small amount of butter for greasing
- Extra shredded cheese for the top, if desired
Step 1: Prepare the Rice
Start with cooked rice that has cooled slightly. Long-grain white rice works particularly well because it stays fluffy instead of becoming overly sticky during baking.
If you’re cooking the rice specifically for this recipe, prepare about ⅔ cup of uncooked rice according to the package directions to yield approximately 2 cups cooked rice.
Avoid overcooking the rice. Since it will continue cooking in the oven, slightly firm rice will give the finished casserole a better texture.
Step 2: Brown the Sausage
Place a large skillet over medium heat. Add the sausage and cook for several minutes, breaking it apart with a wooden spoon or spatula.
Continue cooking until the sausage is thoroughly cooked and nicely browned.
The browned bits that develop in the bottom of the pan add extra flavor to the casserole, so don’t rush this step.
If there is a large amount of excess grease in the skillet, carefully drain some of it before continuing.
Step 3: Sauté the Vegetables
Add the diced onion and bell pepper to the skillet with the sausage.
Cook for approximately 4–5 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant.
Be careful not to let the garlic burn, as burnt garlic can give the entire casserole a bitter flavor.
Step 4: Make the Creamy Filling
Reduce the heat to low.
Add the condensed cream of chicken soup, sour cream, and milk to the skillet. Stir everything together until the sauce becomes smooth and creamy.
Sprinkle in the paprika, Italian seasoning, black pepper, and a small amount of salt.
Remember that sausage, canned soup, and cheese can all contain quite a bit of salt, so it’s best to taste the mixture before adding much additional seasoning.
