Ingredients

For the chicken stew:

  • 1 whole chicken (or 4–5 chicken thighs and 2 breasts)
  • 1 medium onion, finely chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 6 cups chicken broth (or water + bouillon cubes)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme (or Italian seasoning)
  • 1 bay leaf
  • ½ cup heavy cream or milk (optional for creaminess)

For the dumplings:

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter (cold or melted)
  • ¾ cup milk

Step 1: Cook the Chicken

Start by placing your chicken in a large pot and covering it with water or broth. Add a pinch of salt, half an onion, and a bay leaf for extra flavor.

Bring it to a gentle boil, then reduce the heat and let it simmer for 30–40 minutes until the chicken becomes tender and fully cooked.

Once done, remove the chicken and let it cool slightly. Strain and save the broth—this will become the base of your stew.

Shred the chicken into bite-sized pieces, discarding the bones and skin if used.


Step 2: Build the Flavor Base

In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery.

Cook for about 5–7 minutes until the vegetables soften and become fragrant. This step builds the foundation of flavor for the entire dish.

Add the minced garlic and cook for another 30 seconds, just until aromatic.
